Very easy to prepare, cauliflower bread is a healthy and nutritious substitute for the classic flour bread. A piece of cauliflower bread makes up a whole serving of vegetables, so one slice is enough to add to the nutritional value of a meal. The recipe simply requires a food processor and a few ingredients, while the preparation takes less than an hour. Whether you're on a gluten-free diet or looking to eat healthy, using it as a substitute for regular bread to make sandwiches or burgers is a conscious and healthy way to enjoy your favorite dishes.

- 1 large egg
- 120 g of mozzarella prepared with partially skimmed milk and cut into strips

Steps
Part 1 of 3: Grind the Cauliflower
Step 1. Before you start preparing the cauliflower, first heat the oven to 250 ° C
This way it will warm up as you grind the cauliflower and form the bread, so it will be ready when it comes time to bake it.
Step 2. Wash the cauliflower head and place it on a cutting board
Remove the central stem and all the other stalks, so that you only end up with the cauliflower tops, which is the top.
If you don't remove the stalks, the bread will have a hard and not very soft texture. It is not necessary to cut them perfectly, the important thing is to remove the bulk
Step 3. Once the stems are removed, place the cauliflower tops in the food processor and run it at full power to grind them:
they should take on the same consistency as rice.
Once ground, transfer them to a microwave-safe bowl
Step 4. Place the remaining buds in the food processor and grind them until they are the same consistency as the previous ones

Part 2 of 3: Cook and Mix the Cauliflower with the Other Ingredients
Step 1. Although the cauliflower needs to be baked, it must first be cooked in the microwave for 7 minutes to soften
Set it to maximum power.
Step 2. Remove the bowl from the microwave and let the cauliflower cool so you can pick it up without getting burned
Now, lay a third of the ground cauliflower in a piece of cheesecloth and fold it at the corners to make a bag of sorts.
- Squeeze the cheesecloth on the sink until all the liquid left soaked in the cauliflower is extracted. Set the dried cauliflower aside and repeat the process with the remaining one (you will need to do this 2 more times).
- This procedure allows you to remove the water and drain the cauliflower, so that it takes on the same consistency as bread during baking.
- If you don't have cheesecloth, you can use sturdy kitchen paper, folding it the same way.
Step 3. Prepare the egg and mozzarella
Break a large egg into a bowl, then beat it lightly with a fork until the egg white and yolk are combined. As for the mozzarella, create strips with the help of a coarse grater.
Step 4. Once the cauliflower is dry, place it in a large bowl
Add the beaten egg, mozzarella strips, salt and pepper. Stir with a large spoon to get a smooth blend.
To flavor the bread even more, you can add other ingredients, such as a spoonful of chopped fresh aromatic herbs (for example, rosemary or parsley allows you to get a more delicate taste) or another 120 g of mozzarella (to get a taste richer)
Part 3 of 3: Bake the Cauliflower Bread
Step 1. Line a large baking sheet with parchment paper, then lightly grease it with non-stick cooking spray
Step 2. Take the cauliflower out of the bowl with the help of a spoon and place it on the baking sheet
Work it with your hands to create 4 squares of equal size, about 1.5 cm thick. Make sure you leave some space between each piece to prevent them from overlapping during cooking.
Step 3. Once the cauliflower squares have been formed, place the pan in the preheated oven
Let it cook for 15 minutes, then check how it is cooking. If the bread is golden brown, take it out of the oven, otherwise let it cook for another 2 minutes before removing it from the oven.
Step 4. Once the bread is taken out of the oven, let it cool on the kitchen counter for 10 minutes
Then, remove it from the pan using a spatula and serve it hot or cold.
Advice
- If you want to make round rolls, make balls instead of squares and put them in the oven. When cooked, cut them in half: they will be perfect for burgers.
- Some supermarkets and health food stores sell ground cauliflower - if you can find it, you'll save time preparing.
