Snow peas are peas whose peel can also be eaten. They can be served as a side dish or in a single dish, perhaps sautéed in a pan. Snow peas are great for those short on time, as they cook in just 2-5 minutes.
Steps
Part 1 of 3: The Preparation
Step 1. Pour the snow peas into a colander and wash them well with cold water
Step 2. Drain and rinse them again
Step 3. Detach one end of the pod
Pull the thread on the rib of the pod to the other end, and detach that too.
- The thread can be more or less fibrous.
- Snow peas are still not very ripe peas, so in some cases the filament is soft enough to be eaten.
- You can also use a peeling knife to cut the ends.
Step 4. Sear the snow peas to keep them better
If you don't consume them within 2 days, put a pot of water to boil. Boil the snow peas for a minute, then remove them and place them in a container with water and ice.

After draining them, you can keep them in the freezer for up to a week.
Part 2 of 3: Frying in the pan
Step 1. Melt a knob of butter in a skillet over medium-high heat
You can also use a tablespoon of olive oil or a mixture of oil and butter.
- To give the dish a more Asian flavor, try replacing olive oil with sesame oil.
- Use garlic instead of scallions.
- Try pine nuts instead of almonds.
Step 2. Add 25g of chopped almonds
Toast them in a pan.
Step 3. Slice a medium-sized shallot
Put it in a pan with two or three ounces of snow peas.
Step 4. Stir with a wooden spoon for 2 minutes
They should still be a deep dark green color and still crunchy when you take them off the heat.
Step 5. Squeeze half a lemon and add salt and pepper
Part 3 of 3: Steaming
Step 1. Bring a few inches of water to a boil in a pot while you prepare the snow peas
Salt the water lightly and put the lid on.
Step 2. Remove the lid when it starts to boil and insert the steamer basket
Step 3. Pour the jackdaws into the basket
Cover with the lid of the pot.
Step 4. Wait 3 minutes, then remove the basket from the pot
Step 5. Season the snow peas with salt and pepper and serve them immediately
Advice
- Snow peas can also be eaten raw, alone or in salads.
- When you combine them with a stir-fried dish, prepare them before you start, but only add them in the last two minutes of cooking.
