Steps
Method 1 of 5: Cooked Vanilla Icing
Step 1. Prepare a bowl in a pot full of simmering water
Choose a pot large enough to hold the bowl, fill it with 10 cm of water and place it on the stove over medium heat. When the water simmers, put the bowl inside.
- Make sure that the water level is not too high to risk it entering the bowl.
- The water should not boil; if it gets too hot, turn the heat down.
Step 2. Cook the icing
Put the egg whites, sugar, and corn syrup in the bowl. Stir until they are perfectly combined and keep doing this until the sugar dissolves and the mixture warms up. Use a cake thermometer to check the temperature of the icing; when it reaches 70 ° C it is ready to be whipped.
- Keep an eye on the temperature of the glaze because it is easy to overcook it.
- If it feels like it takes too long to heat up, turn up the heat. It should reach 70 ° C in two minutes.
Step 3. Whip the icing
Use a whisk or electric hand mixer to whip the frosting until fluffy and shiny. Add the vanilla and continue whipping for a total of 5 minutes. Remove the icing from the heat and use it to coat your cake.
Method 2 of 5: Fudge Glaze
Step 1. Boil the sugar, cocoa and milk
Put the ingredients in a saucepan and bring them to a boil over medium heat, stirring constantly. When they boil, remove them from the heat.
Step 2. Add the butter, vanilla and salt
Stir them into the hot chocolate mixture and return the pot to the heat. Keep stirring until the butter has melted and the ingredients are completely combined. Remove the icing from the heat.
Step 3. Whip the glaze with a spoon
When the glaze has cooled, whip it with a spoon until it becomes thick and shiny. When it becomes difficult to move the spoon in the glaze, it is ready to use.
- This frosting has a soft texture, so pour it over your cake or cupcakes instead of using a spatula to frosting.
- If the mix feels too soft, put it back on the stove for a few minutes to make it thicken.
Method 3 of 5: Butter Cream Glaze
Step 1. Whip the butter
The first step is to change the consistency of the butter to make it soft, fluffy and easy to combine with the rest of the ingredients. Put it in a bowl and whisk it with an electric mixer for several minutes.
Step 2. Add the sugar
Continue whipping the butter until the sugar is fully incorporated.
Step 3. Combine the cream and salt
Finish the glaze by whipping the cream with the salt until the glaze becomes light, fluffy and homogeneous. Use the frosting on your cake or cupcakes immediately, or store it in the fridge if you want to use it later.
- This glaze can be modified easily by adding cocoa to make it chocolate.
- Add a couple of drops of lemon juice, almond extract, or another extract to flavor the frosting however you like.
- Make a colored buttercream frosting by adding some food coloring.
Method 4 of 5: Cream Cheese Icing
Step 1. Whip the cream cheese with the butter
Put these ingredients in a bowl and whisk them with an electric or hand mixer until fluffy and fluffy.
Step 2. Add the powdered sugar and milk
Continue whipping while adding these two ingredients and until the mixture is smooth and the glaze has reached the right consistency.
- If you need to thicken the glaze, add some powdered sugar.
- To soften the glaze, add a tablespoon of milk.
Method 5 of 5: Sugar Glaze
Step 1. Mix the ingredients together
Put the powdered sugar, vanilla and milk in a bowl. Use a spoon or whisk to mix the ingredients. Pour the frosting over the cake, cupcakes, or cookies you cooked.
Step 2. Customize the icing
This simple basic glaze can be enhanced to achieve different flavors. Replace milk with the following ingredients if you want to try new flavors.
- Lemon juice.
- Orange juice.
- Maple syrup.
- Bourbon.
- Raspberry Jam.
- Chocolate syrup.
Advice
- The smallest drop of liquid can change the consistency of the sugar-based icing, so add little by little.
