With a few simple ingredients, which you probably already have on hand, you can create a delicious homemade icing, and use it to decorate and complete cakes, cupcakes and cookies. Step 1. Weigh and pour the ingredients into a medium-sized bowl

Use a whisk or an immersion blender and mix all the ingredients until they are perfectly smooth and homogeneous. Keep whipping for a soft and airy consistency.
- If the icing feels too runny, use more powdered sugar to thicken it.

Step 1. Bring water to a boil and place a bowl over the pot to create a double boiler
Before starting, make sure the pot is the right size to support the bowl. Pour a few inches of water into the pot and bring it to a boil over medium heat. When the water boils, place the bowl on the pot creating the bain marie.
- Don't use too much water. A quantity of water will be sufficient to heat the tureen; do not overdo the quantities to avoid the risk of the water coming into contact with the ingredients of the glaze.
- Only bring the water to a light boil.
Step 2. Prepare the icing mixture
Add the egg whites, sugar, and corn syrup to the bowl. Stir with a spoon. Take a whisk and stir the mixture as it heats for the sugar to dissolve.
Step 3. Check the temperature
Use a cake thermometer and measure the temperature reached by the mixture. Once you have touched 71 ° C you can move on to the next point.
