Steps
Method 1 of 4: Custard
Step 1. Mix all the ingredients in a saucepan, except the egg yolks:
700 ml of milk, 3 tablespoons of corn starch, half a tablespoon of salt, 100g of sugar, butter and a pinch of vanilla extract. Mix everything well.
Step 2. Heat the mixture over medium heat
Let it start to simmer, then remove the pot from the heat.
Step 3. Beat the egg yolks in a medium bowl
It is better to use a whisk. Continue whisking for a minute.
Step 4. Pour the cream into the bowl with the egg yolks
Keep whisking to mix and, in the meantime, the egg yolks will take up some heat.
Step 5. Pour the eggs and cream into the pot and turn on the stove over medium heat
Continue stirring with a wooden spoon without stopping. Also scratch the bottom of the pot so the cream doesn't stick. Keep stirring until the cream has thickened and you have obtained the desired consistency. Don't let it start to boil, or lumps will form.
Step 6. Let it thicken
Wait at least 5 minutes before serving, so that the cream becomes firmer.
Step 7. Serve with a sprinkle of cinnamon and a handful of strawberries
Now you can enjoy this delicious dessert!
Method 2 of 4: Low Fat Cream
Step 1. Pour all the ingredients into a saucepan, except for 2 tablespoons of milk
Step 2. Divide the vanilla bean in half lengthwise
Detach the seeds that you will need to add to the milk along with the pod.
Step 3. Heat the milk until it simmer
Step 4. Mix the sugar with the cornstarch in a medium sized bowl according to the indicated doses
Mix well.
Step 5. Add 2 tablespoons of milk and 2 egg yolks to the sugar and flour mixture
Mix the ingredients together to get rid of the lumps.
Step 6. Remove the vanilla bean from the milk
Step 7. Pour the warm milk over the egg mixture
Mix everything with a whisk.
Step 8. Return all ingredients to the pot and continue whisking with the whisk as they cook over medium heat
The cream should thicken and simmer.
Step 9. Serve the dessert as well
Pass the cream through a colander to remove any seeds or lumps. Otherwise, serve it directly with a handful of strawberries.
Method 3 of 4: Baked Cream
Step 1. Preheat the oven to 180 ° C
Step 2. Put the eggs, milk, sugar, salt in a bowl and beat everything with a whisk until they are completely blended
Step 3. Pour the mixture into cups suitable for baking
Sprinkle the cream with a sprinkle of cinnamon and nutmeg.
Step 4. Place the baking cups in a high-sided baking tray
Pour a couple of inches of water into the bottom of the pan.
Step 5. Let the cups cook for 50-55 minutes without covering them
To check the cooking, insert a knife in the center of the cream: if it remains clean, it means that it is ready. Remove the cups from the oven and let the cream cool.
Step 6. Serve this dessert as well
You can enjoy it while still hot or let it cool for an hour.
Method 4 of 4: Crème Caramel
Step 1. Preheat the oven to 180 ° C
Step 2. Melt 170 grams of sugar in a saucepan over low heat
It must turn golden, but it must not burn.
Step 3. Pour the melted sugar into the cups
Tilt them so that the sugar completely covers the bottom. Let it set for 10 minutes.
Step 4. Beat the eggs, milk, vanilla extract and the other half of the sugar in a bowl
Mix all the ingredients well.
Step 5. Pour the mixture over the caramelized sugar
Step 6. Place the baking cups in a high-sided baking tray
Pour a couple of inches of water into the pan.
Step 7. Let them cook for 40-45 minutes
To check the cooking, insert a knife or a toothpick in the center of the cream: if it remains clean, it means that it is ready. Remove the cups from the oven and let the cream cool on a rack.
Step 8. Serve the cream as well
Enjoy it while still hot, or let it cool for a few hours before eating.
Step 9. Finished
Advice
A patina always forms on the surface of the cream: this is due to the evaporation of water. You can avoid this annoying inconvenience by covering the pot with the lid, or by gently beating the surface layer of the cream. Although it sounds strange, some people consider that patina a real delicacy
Warnings
- The cream must not boil for any reason!
- Make sure that the cream is very hot, so that the eggs contained in the mixture cook well.
