Cupcakes are a delicious dessert perfect for any occasion. Whether you want to have a party or celebrate a birthday or a special occasion; or simply enjoy a sweet, cupcakes are ideal. The varieties are endless: to find out how to prepare them, follow these instructions.
Ingrediants
Old Style Cupcake
- 1 3/4 cups cake flour (not self-raising)
- 1 1/4 cup 00 flour
- 2 cups of sugar
- 1 tablespoon of baking powder
- 3/4 of a tablespoon of salt
- 4 cubes of unsalted butter
- 4 large eggs
- 1 cup of whole milk
- 1 tablespoon of vanilla extract
- 6 cups of powdered sugar
- 1/2 cup of milk
- 2 teaspoons of vanillin
Black & White cupcake
- 1 1/3 cup of milk chocolate
- 1/2 cup of vegetable oil
- 3 large eggs
- A box of Cameo type chocolate cake mix
- 3 tablespoons of unsalted butter
- 50 gr. of marshmellow cream
- A bag of chocolate chips
- 2/3 cup of cream
- 1 tablespoon of molasses
- Half a pack of vanilla icing
Tiramisu cupcake
- 1 ¼ cup cake flour (not self-rising)
- ¾ tablespoon of baking powder
- ½ tablespoon of coarse salt
- ¼ cup of milk
- 1 half of a vanilla bean
- 4 tablespoons of unsalted butter
- 3 whole eggs
- 3 reds
- 1 cup of granulated sugar
- 1/3 cup of freshly brewed coffee
- 30 gr. of Marsala
- ¼ cup of granulated sugar
- 1 cup of cream
- 250 gr. of mascarpone
- ½ cup of powdered sugar
- Unsweetened cocoa powder
Steps
Method 1 of 4: Old Style Cupcake
Step 1. Preheat the oven to 160ºC
Step 2. Fill the cupcake pan with baking cups
Set it aside.
Step 3. Mix the flours, sugar, yeast and salt
Beat well for 3 minutes until combined.
Step 4. Add the 4 butter cubes
Stir until the butter blends with the flour.
Step 5. Add the eggs one at a time to mix well
Step 6. Add milk and vanilla
Beat all the ingredients well, removing any residues from the bottom of the bowl.
Step 7. Fill each cup 2/3 full
This will give the cupcakes room to rise.
Step 8. Bake for 17-20 minutes
After 15 minutes, insert a toothpick into a cupcake. If it comes out clean, the cupcakes are cooked and can be taken out of the oven. Eventually check every 2 minutes until they are ready.
Step 9. Make the icing
You can make it while the cupcakes cook. To make the icing, make a cream with two cubes of soft butter, powdered sugar, milk and vanilla. Stir with a spatula until smooth and gradually add three more cups of sugar to make it creamy.
Step 10. Cool the cupcakes
Leave them in a cool place for at least 3-5 minutes so they don't melt the icing.
Step 11. Decorate them with icing
Use a spoon or spatula to generously spread it over the cupcake.
Step 12. Serve
Enjoy them at room temperature.
Method 2 of 4: Black & White Cupcakes
Step 1. Preheat the oven to 180ºC
Step 2. Fill a 24 muffin pan with the same number of cups
Set aside.
Step 3. Mix the chocolate, oil, eggs and cake mix in a bowl
Step 4. Beat the ingredients well
Mix them with the mixer on low speed for 30 seconds. Use a pot licker to pick up what's stuck to the bowl and work on medium speed for another 2 minutes.
Step 5. With a spoon, fill the cups with batter
Get to 2/3 to allow the cupcakes to grow.
Step 6. Cook them for 18-24 minutes
After 15 minutes, insert a toothpick into one of the cupcakes. If it comes out clean, they are cooked and can be taken out of the oven. Eventually check every 2 minutes until they are ready. Then remove them from the pan and let them cool on a rack.
Step 7. Make the marshmallow filling
Microwave 3 tablespoons of butter in a covered bowl. Then mix with the marshmellow cream. Microwave for another minute. Let it cool down for two minutes and beat with an electric whisk for at least a minute until the cream becomes smooth.
Step 8. Make a hole of about 2 cm in the center of each cupcake
Fill a pastry bag with cream and stuff them.
Step 9. Mix the cream with a tablespoon of molasses in a small saucepan
Cook over medium heat until it comes to a boil. Pour the chocolate chips into the mix and stir until smooth. Let it cool for 4-5 minutes to thicken a little.
Step 10. Dip the tips of the cupcakes into the chocolate mix
Blunt the tip with a knife if necessary. Place the cupcakes in another pan and let the topping set.
Step 11. Put the vanilla icing in a pastry bag
Make sure it has a rounded nozzle. Make small circles over the center of the cupcake, slightly overlapping each other. Wait a couple of minutes for the cream to adapt to the cupcake.
Step 12. Serve
Enjoy the desserts alone or with a glass of milk.
Method 3 of 4: Tiramisu cupcakes
Step 1. Preheat the oven to 160ºC
Step 2. Fill a baking sheet with baking cups
Step 3. Mix the flour, baking powder and salt
Step 4. Divide a vanilla bean in half
Scrape off the seeds.
Step 5. Heat milk and vanilla seeds in a saucepan over medium heat
Turn off as soon as the first bubbles appear on the surface.
Step 6. Stir the butter until it is melted
'Then let the mix sit for 15 minutes to thicken it.
Step 7. Strain the milk mix through a colander, pouring it into a bowl
Discard the vanilla seeds.
Step 8. Mix the eggs, yolks, and sugar
Use a medium speed electric whisk.
Step 9. Place the bowl on a pot of hot water
Mix the ingredients by hand until the sugar dissolves and the mix warms up. This should take about 5-6 minutes. Remove from heat.
Step 10. Stir with the electric mixer
Continue until the mixture is light yellow, soft and thick enough to hold a thread between your fingers for a few seconds.
Step 11. Add the flour mix to the egg mix three times
At first, pour ½ cup of the batter into the milk to thicken it, then pour the milk into the rest of the batter until you have mixed all the ingredients.
Step 12. Fill each cup 2/3 full
This will give the cupcakes a chance to grow. Distribute the batter evenly.
Step 13. Cook for 20 minutes
Rotate the pan halfway through cooking. Continue cooking until the center solidifies - you understand this by inserting a toothpick into the cupcake - and the edges turn golden brown. Then, transfer the pan to the rack to let them cool.
Step 14. Get wet
Mix 1/3 of the coffee with the Marsala and the granulated sugar until it is dissolved. Let it cool down.
Step 15. Brush the tips of the cupcakes with the syrup
Continue until the wet is used up. Let the cupcakes soak up the liquid for 30 minutes.
Step 16. Make the icing
Whip the cream with the electric mixer at medium speed. Mix the mascarpone and icing sugar until the mixture becomes smooth. Then combine the whipped cream with the cheese until just to mix.
Step 17. Pour the frosting over the cupcakes
Chill overnight in a sealed container.
Step 18. Serve
Sprinkle with cocoa and enjoy them whenever you want.
Method 4 of 4: Other Cupcake Variations
