When we are faced with a whole squid we can have doubts, and not know how to effectively transform it into rings ready to be breaded and fried. With the right directions, cleaning a squid can be a simple, quick and tidy process.
Steps
Step 1. Spread the squid on a sheet of newspaper
You will see that the head, where the eyes and tentacles are located, are clearly separated from the body.
Step 2. Put on a pair of rubber gloves
They are not necessary, but they will protect your hands from fish odor and residues.
Step 3. Grab the squid's head, just behind the eyes, where it connects to the body
Pull the tentacles towards you, gently but firmly, while holding your head firmly. The internal organs should slide outwards.
Step 4. The body will now have assumed the appearance of a small empty sac
Find and extract with your fingers the hard part hidden inside, the squid bone.
Step 5. With a sharp knife, gently scrape the outer surface of the squid's body
As if printed on cellophane sheet, the small dark specks should peel off revealing the shiny white flesh underneath.
Step 6. Cut the squid body into horizontal rings
Set them aside.
