Cod is a very popular fish in all cuisines of the world, thanks to its firm flesh and low content of bones. It is a very versatile fish, which lends itself perfectly to being cooked in different ways, including fried, baked or boiled. While cod has a high cholesterol content, it is low in saturated fat and contains a lot of Omega 3 oils. It is also an excellent source of vitamins and minerals. Breaded Cod
- 2 cod fillets (450 g)
- 60 ml of milk
- 30 g of corn flour

Grilled Cod in the Oven
- 2 cod fillets (450 g)

Boiled Cod
- 1, 5 l of cold water
- 60 ml of dry white wine
- 3 very thin sliced shallots
- 3 sliced red potatoes
- 1 sliced carrot
- 30 g of sea salt
- 2 bay leaves
- 15 g of black peppercorns
- 4 cod fillets
- Half a lemon sliced
- 6 sprigs of chopped parsley
Cod Baked
- 2 cod fillets (450 g)
- 60 ml of melted butter
- 30 ml of lemon juice
- 30 g of flour
- 2-3 g of sea salt
- 1-2 g of white pepper
- Paprika to taste
Steps
Method 1 of 4: Breaded Cod
Step 1. Prepare the cod fillets
Rinse them with cold running water for a few minutes. Dry them carefully by dabbing them with absorbent paper to remove excess water.
Step 2. Pour the milk into a bowl
Step 3. Soak the fillets in milk for 15 minutes
The milk will remove the strong 'fishy' smell from the cod.
Step 4. In a bowl, mix the cornmeal, salt and pepper
If you don't have a suitable bowl, you can use a regular plate. It is much easier to bread cod fillets using a shallow bowl or plate.
Step 5. Pour the extra virgin olive oil into a pan and heat it using medium-high heat for about 3 minutes
Step 6. Remove the fillet from the milk and drain the excess liquid, then bread it in the cornmeal
Turn it on each side several times for the flour to adhere firmly to the fish.
Step 7. Fry the fish for 5 minutes on each side
Step 8. Remove the fillet from the pan and transfer it to the serving dish
Step 9. Season the fish with a few drops of lemon juice
Step 10. Decorate the dish with fresh parsley and serve it hot
Method 2 of 4: Baked Grilled Cod
Step 1. Prepare the cod fillets

Step 2. Preheat your oven grill to maximum temperature
Step 3. Grease the baking sheet with a little extra virgin olive oil
You will prevent the fish from sticking to the pan during cooking

Step 6. Drizzle the fillets with lemon juice

Method 3 of 4: Boiled Cod
Step 1. Prepare the cod fillets

Step 2. In a large, shallow pot, mix the water, wine, shallots, potatoes, carrot, salt, bay leaf and peppercorns
Step 3. Bring the water to a boil using a high heat
Step 4. Reduce the heat to low so that the water boils very slowly
Step 5. Arrange the cod fillets in the pot, forming a single layer
Make sure all the fish are completely covered in water.
Step 6. Cook the cod until the flesh becomes opaque, flaking very easily
It should take about 7 minutes. The internal temperature of the fish should reach 80 ° C. Vegetables should also be cooked and tender if skewered with a fork.
Step 7. Serve
Arrange each fillet in a single bowl, and add the vegetables and broth. Decorate with sliced lemon and chopped parsley.
Method 4 of 4: Baked Cod
Step 1. Prepare the cod fillets
Rinse them with cold running water for a few minutes. Dry them carefully by dabbing them with absorbent paper to remove excess water.
Step 2. Preheat the oven to 350 degrees Fahrenheit
Step 3. In a small bowl, mix the butter and lemon juice
Work the two ingredients until they are well blended forming a smooth cream.

Step 5. Dip the fillets into the butter mixture and then bread them with the flour
The butter will allow the flour to adhere tightly to the fillets. Gently shake the fish to remove any excess flour.

Step 7. Use the leftover butter to season the surface of the fillets and sprinkle them with paprika to your taste
Step 8. Place the pan, uncovered, and cook for 25-30 minutes, or until the cod pulp falls apart easily using a fork

Decorate the fish with the parsley sprigs and the sliced lemon. Bring it to the table while still hot.
Advice
You can replace cornmeal with breadcrumbs or crumbled crackers. If you want to avoid the extra calories of breading, you can dip the cod fillets in milk and then fry them. Remember, however, that this will lose the crunchiness that comes from the cornmeal or breadcrumbs used for breading
Warnings
- Cod fillets do not have many bones, however eat carefully to avoid ingesting one.
- Always keep cod in the refrigerator until you are ready to cook it. Do not store frozen fish for more than 3 months. Never freeze a fish that has already been thawed.
