It is easy to prepare a soft and tasty dough thanks to the chemical reactions triggered by baking soda, baking powder or vinegar. This article explains how to quickly make a pizza dough, soda bread or buttermilk-based bread that you can enrich with other ingredients.

Method 1 of 3: Make a Yeast-Free Pizza Dough
Step 1. Measure 350g of all-purpose flour and pour it into a bowl
Add 3 teaspoons of baking powder and 1 teaspoon of salt. Beat the dry ingredients for about 30 seconds to evenly distribute the baking powder.
Step 2. Add 1 tablespoon of vegetable oil (such as olive or canola) and 180ml water
Mix until it forms a ball. If the flour absorbs a large part of the water, you should add another 60 ml.
If you need to use more water, add 1 or 2 tablespoons at a time. Avoid pouring so much that the dough is sticky
Step 3. Lightly flour your work surface and lay the mixture on it
Knead for 3 or 4 minutes, so as to make it smooth and elastic.
You can knead as you wish, the important thing is to roll out and fold the dough repeatedly, in order to favor the development of gluten in the flour
Step 4. Form the dough
To get the desired shape you can roll it out with a rolling pin, otherwise lay it on a pizza pan and roll it out to fit its size. If you use it to make a single pizza, remember that the crust will be thick.
If you want to make two thin-crusted pizzas, divide the dough in half and roll it out to the desired thickness
Step 5. Preheat the oven to 200 ° C
Season the dough with the sauce of your choice and garnish it. Bake it for 15-25 minutes.
If you want to make two thin crust pizzas, it will only take 10-15 minutes
Method 2 of 3: Make the Yeast Free Bread Dough
Step 1. Preheat the oven to 180 ° C and prepare a rectangular 23 x 13 cm mold by greasing it with cooking spray to prevent the bread from sticking
Step 2. Measure all the dry ingredients in a medium bowl and beat them for about 30 seconds to get an even blend
You will need:
- 250 g of all-purpose flour;
- 100 g of white sugar;
- 1 and a half teaspoons of baking powder;
- Half a teaspoon of baking soda
- 1 teaspoon of salt.
Step 3. Melt 60g of butter in a separate bowl
Add the other wet ingredients, i.e. 250ml buttermilk and 1 large egg. Beat them until smooth.
If you don't want to use butter, you can replace it with the same amount of vegetable oil, for example olive oil
Step 4. Pour the wet ingredients over the dry ones and mix them gently with a rubber spatula
It is not necessary to mix them for a long time.
If you plan to add other ingredients, pour them in at this time, before the dry ingredients completely mix with the wet ones
Step 5. Add optional ingredients
Making sweet or savory bread is quick and easy. Mix the ingredients lightly, you don't need to waste too much time. You can add 1 1/2 cups of dried or dried fruit or use your favorite seasonings and herbs. Here are some of the tastiest ideas:
- Fruits: blueberries, dried cherries, apples, blueberries, orange peel, raisins;

Step 1. Preheat the oven to 200 ° C
Take a rectangular mold or a pizza pan and set it aside.
You will not need a bread pan, as the soda pan must be formed before cooking
Step 2. Measure all dry ingredients into a large bowl and beat until smooth
You will need:
- 500 g of flour;
- 1 tablespoon of sugar;
- Half a teaspoon of baking powder;
- Half a teaspoon of baking soda.
Step 3. Make a hole in the center of the dry ingredients, then pour 350ml of water and 2 teaspoons of vinegar into them
Mix them with a rubber spatula or wooden spoon until they form a lumpy paste.
You can use white or apple vinegar for this recipe
Step 4. Lightly flour your work surface and place a spoonful of dough on it
Work it for 3 to 4 minutes until it becomes smooth and elastic.
Knead it as you like. The important thing is to roll it out and fold it repeatedly to encourage the development of gluten in the flour
Step 5. Smooth the dough with your palms until it forms a round disk with a thickness of about 4 cm
Place it on a baking sheet and score an X on the surface with a sharp knife.
The X should be deep, almost reaching the bottom of the dough. In this way the steam can escape and the soda bread will acquire its characteristic shape
Step 6. Bake it for 30-40 minutes
When cooked, the bread will have become compact and will have a nice crust. Take it out of the oven carefully and brush 15 g of melted butter to make it even tastier and soften the crust.
