Steps
Part 1 of 3: Dry Roasted Raw Almonds
Step 1. Spread 3 cups of almonds on an ungreased baking sheet
Cover it with a sheet of parchment paper to make cleaning easier. The almonds should be distributed on the baking tray to create a single layer before being baked. Preheat the oven to 350 degrees Fahrenheit. It should be warm before roasting.
- You can also grease the pan with vegetable oil or butter before cooking.
- Prepare another pan in case you have more almonds.
Step 2. Season the almonds with salt
Cooking them without oils or seasonings is actually the healthiest alternative. However, those who prefer them salted can sprinkle 1 tablespoon of salt on the almonds before baking them.
- Alternatively, you can make a spice blend with the following ingredients to further flavor the almonds: 1 tablespoon of chili powder, 1 tablespoon of cumin, 1 tablespoon of coriander, 1 tablespoon of cinnamon, 1 tablespoon of olive oil and pepper to taste.
- Combine the chili powder, cilantro, cumin, cinnamon, and pepper in a small bowl. To start, pour a drizzle of olive oil over the almonds, then sprinkle the spice mixture evenly.
Step 3. Bake the almonds for 10-12 minutes
Open the oven door to check if the almonds are ready. Once roasted, they will brown and give off a characteristic odor.
Step 4. Let the almonds cool for about 10-15 minutes
Since they have a high oil content, once baked the almonds will continue to cook for about 10-15 minutes. So wait for a quarter of an hour before tasting them to make sure they have an optimal flavor and texture.
Step 5. Taste an almond to check its taste and texture
When cooked, the almonds should have a characteristic toasted taste and be crunchy. Put them back in the oven and taste them again after 5 minutes if they are slightly bitter or slightly crunchy.
Step 6. Move them to a bowl or plate
Sprinkle a pinch of salt if desired. Let them cool on the baking sheet for 5-10 minutes, then serve them in a bowl or plate.
Part 2 of 3: Honey Roasted Almonds
Step 1. Preheat the oven to 180 ° C
While it heats up, spread 2 cups of almonds on a baking sheet. First line it with a sheet of parchment paper to make cleaning easier.
- Grease the pan with vegetable oil or butter before baking if you don't have parchment paper.
- Spread the almonds on the pan creating a single layer. Use 2 if it is too small.
Step 2. In a large bowl, mix 60 g of granulated sugar and a pinch of salt
Mix them until you get a homogeneous mixture. Set the bowl aside: you will only need the mixture when cooked.
Add 1 tablespoon of cayenne pepper to the sugar and salt mixture to make honey spiced almonds
Step 3. Bake the almonds for 10-15 minutes
Keep the oven closed so they cook quickly. Do not take them out of the oven until they are golden and have started to smell strongly.
Step 4. Mix 60ml of honey and 2 tablespoons (30ml) of water in a large saucepan
Adjust the heat to medium heat and bring the mixture to a boil. Place the almonds in the pot and stir them constantly for 5 minutes as they absorb the liquid.
Step 5. Move the almonds to the sugar bowl
Don't wait for them to cool - they need to be hot for the sugar to stick. Stir them for about 2-3 minutes so that the sugar coats them evenly.
Step 6. Spread the almonds on the parchment paper
Let them cool for about 30-40 minutes for the sugar to crystallize. Cool and dry the almonds, serve them as you wish or store them at room temperature.
Part 3 of 3: Cinnamon Roasted Almonds
Step 1. Preheat the oven to 180 ° C and grease a baking sheet
Use butter or vegetable oil spray to prevent the almonds from sticking to the pan as it cools. Set the pan aside until it's time to cook them.
Step 2. Beat an egg white until stiff in a small bowl
Beat the egg white with a whisk in a quick circular motion. Slowly add 2 tablespoons of water as you whisk. Proceed until the egg white has taken on a soft and light consistency.
Separate the egg white from the yolk before whisking to completely remove the yellow
Step 3. Pour the raw almonds into the egg white bowl
Stir the almonds into the whipped egg white using a large spoon. Continue stirring until the almonds are lightly coated with egg white.
Step 4. Mix ½ cup of granulated sugar, 25 g of cinnamon and a pinch of salt in a bowl
Mix the ingredients until you get a homogeneous mixture. Spread the almonds on the baking sheet in a single layer, then sprinkle the cinnamon-sugar mixture evenly over them.
Step 5. Bake the almonds for 25-30 minutes
After 25 minutes, open the oven to check the almonds. At the end of cooking they should be golden brown and give off a pleasant smell, typical of dried fruit.
Leave them in the oven for a good 30 minutes if you prefer them more crunchy
Step 6. Place the almonds on a cooling rack for 10-15 minutes
Cinnamon almonds are often served hot. Serve them after 10 minutes, while they are hot, in order to enjoy them at their best.
