There are endless varieties of ice cream, even with Nutella, caramel or other goodies. It is possible to make ice cream with milk instead of cream and using very few eggs you will get a thicker dessert with a more intense flavor. Read on to find out how to make ice cream at home!
Ingrediants
- 600 grams of whole milk
- 5 Eggs
- 100 grams of granulated sugar
- 1 teaspoon vanilla or almond extract (optional)
- 1 cup of your chosen flavoring ingredient, such as strawberries or chocolate (optional)
- Ingredients to make the ice cream tastier, such as chocolate chips, fruit pieces or caramel (optional)
Steps
Method 1 of 3: Part 1: Prepare the Base
Step 1. Fill a pot of water and bring it to a boil
It must be large enough to hold a bowl or other pot for cooking in a double boiler.
Step 2. Separate the yolks from the whites
Place two bowls (or two containers) on the clean work surface. One is used to contain the yolks, the other for the egg whites. Open an egg and hold the yolk in your hand while the egg white slips between your fingers inside the bowl; pour the red into the other.
Step 3. Heat the milk
Take a saucepan to heat the milk over medium heat. When it starts to boil, turn the heat down slightly.
Step 4. Beat the egg yolks with the sugar in a heat resistant bowl
You need to get a smooth and silky mixture. Do this while heating the milk, as you need to combine these ingredients quickly.
- The mixture is ready when it becomes thick. Continue whisking for at least two minutes.
- If you decide to use a flavoring, such as vanilla or almond extract, add it during this step to the egg and sugar mixture.
Step 5. Slowly pour the milk over the egg and sugar mixture while continuing to beat
Don't add it too quickly, as the heat of the milk could cause the eggs to cook. Continue whisking the mixture until it becomes thick and creamy.
Step 6. Place the bowl in the pot with the boiling water to cook the mixture in a double boiler
Stir without stopping with a wooden spoon. It will begin to thicken like a cream. You can remove the pot from the heat when the mixture sticks to the spoon. At that point, set the bowl aside and let the cream cool.
- Not even a drop of water should fall into the bowl, otherwise the cream will not cook properly and you will not get the desired consistency.
- It is better to use a wooden spoon rather than a metal one, as the latter could contaminate the flavor of the cream.
Method 2 of 3: Part 2: Add Flavors
Step 1. Add your chosen flavors to the ice cream
After preparing the base, you can add any ingredients you like to create your favorite ice cream. You could flavor it with fruit, chocolate, caramel and other crunchy ingredients to make the ice cream really special.
- For a fruit ice cream, make a puree of the fruit of your choice, then add it to the ice cream when it is at room temperature.
- For vanilla ice cream, split a vanilla bean in half and add it to the cream before boiling. Remove it from the bowl when you add the eggs.
- For a chocolate ice cream, add melted chocolate to the base (after letting it cool down a bit).
Step 2. Add other ingredients to make the ice cream tastier
Use elements with different textures, but try to choose flavors that go well with each other.
- You can add pieces of dried fruit, or fresh fruit that is preferably very ripe, so that it gives the ice cream an intense flavor.
- Add chopped nuts or cocoa beans to make the ice cream crisp.
- A spoonful of cinnamon or another spice can give your ice cream an edge.
- Candy can also add a special touch.
Method 3 of 3: Part 3: Freezing the Ice Cream
Step 1. Put the ice cream in the refrigerator
Cover the bowl with cling film and leave it in the fridge for about 3 hours, so that it cools down well before putting the mixture in the ice cream maker.
Step 2. Pour the ice cream into the ice cream maker
Follow the instructions of the model in your possession.
Step 3. Remove the ice cream from the ice cream maker when it is not yet completely frozen
In doing so, it will remain denser and be less inconsistent.
Step 4. Put the ice cream in the freezer
Let it become solid.
Step 5. Allow the ice cream to thaw slightly before serving
In this way, when you taste it it will be more palatable and you will be able to better capture the flavor of the dessert you have created.
