If you plan to serve a small appetizer at a party, the appetizers are perfect because they can be eaten with your hands, without the need for cutlery and, in some cases, plates. They are also quick and easy to prepare, among other things some recipes do not require the use of the oven. Any ideas? Skewers of mozzarella and cherry tomatoes, lettuce boats stuffed with blue cheese and bacon, mini quiche without crust or stuffed cherry peppers. Whichever recipe you choose, you can prepare it in advance to fully enjoy the party.
Ingrediants
Skewers with Mozzarella and Cherry Tomatoes
- 60 ml of extra virgin olive oil
- 1 minced clove of garlic
- Sea salt
- Freshly ground black pepper
- 24 ripe cherry tomatoes
- 48 morsels of mozzarella
- 24 fresh basil leaves
Lettuce boats stuffed with blue cheese and bacon
- 165 g of whole yogurt
- 1 finely grated clove of garlic
- 30 ml of fresh lemon juice
- ½ teaspoon of honey
- Kosher salt and freshly ground black pepper
- 170 g of crumbled blue cheese
- 2 heads of romaine lettuce, with separate leaves
- 170 g of cooked and chopped bacon
- 2 tablespoons of finely chopped chives
- Lemon wedges (for serving)
Mini Quiche Without Crust
- 6 finely sliced shallots
- 2 tablespoons of finely chopped parsley
- 6 large eggs and 3 large egg yolks
- 50 g of grated Parmesan cheese
- Salt and Pepper To Taste.
- 350 ml of milk
- 55 g of emmental flakes
Stuffed Cherry Chillies
- 10 spicy cherry peppers without stem and seeds
- 110 g of spicy Auricchio
- 5 thin slices of ham
- 120 ml of extra virgin olive oil
Steps
Method 1 of 4: Prepare the Mozzarella and Cherry Tomato Skewers
Step 1. In a large bowl mix well 60 ml of extra virgin olive oil, 1 minced clove of garlic, sea salt and freshly ground black pepper to taste
- If you like garlic, you can add more chopped cloves.
- If you want to make spicy skewers, add a pinch of red pepper flakes.
Step 2. Mix the ingredients, place 48 pieces of mozzarella in the bowl and mix them with tongs or a wooden spoon to coat them well
- You can also use buffalo morsels.
- Alternatively, use normal-sized mozzarella by cutting them into bite-sized pieces.
Step 3. Take a toothpick or wooden skewer and skewer a morsel of mozzarella, a leaf of fresh basil and a ripe cherry tomato
You can layer the ingredients in the same order as often as you like. Either way, the smaller skewers are easier to eat
Step 4. To finish, skewer another morsel and place the skewer on the plate
Repeat the process until you finish the morsels, tomatoes and basil.
Method 2 of 4: Prepare the Lettuce Boats Stuffed with Blue Cheese and Bacon
Step 1. In a medium bowl, mix 165 g of whole yogurt, 1 finely grated clove of garlic, 30 ml of fresh lemon juice, ½ teaspoon of honey and 85 g of crumbled blue cheese
Mix well with a spoon making sure to break up the cheese.
Plain yogurt is best for this recipe, so don't use Greek
Step 2. Prepare the mixture, season with kosher salt and freshly ground black pepper
It is good to taste it before seasoning it, in order to use the right quantities of salt and pepper.
Step 3. Take a romaine leaf and place 1-2 teaspoons of yogurt in the center (remove the leaves from the 2 heads of lettuce before starting)
Then, finish stuffing them using 170g of chopped cooked bacon and the last 85g of crumbled blue cheese.
To spread and evenly distribute the yogurt in the center of the leaves, help with a spoon
Step 4. Stuff the lettuce boats, place them on a plate and garnish with 2 tablespoons of finely chopped chives
Add lemon wedges so guests can squeeze them onto the boats before eating them.
Chives are optional
Method 3 of 4: Make Crustless Mini Quiche
Step 1. Preheat the oven to 180 ° C and grease 2 non-stick 24 muffin pans using cooking spray
The spray can be replaced with butter
Step 2. Grease the pan, take 6 finely sliced shallots and 2 tablespoons of chopped fresh parsley
Lay them on the bottom of each compartment, trying to distribute them as evenly as possible.
Step 3. In a large bowl, mix 6 large eggs, 3 large egg yolks, 50g grated Parmesan, 350ml milk, salt and pepper to taste
Mix with a whisk until the mixture is smooth.
Use whole milk for best results
Step 4. After mixing the ingredients, transfer the amalgam into a dispenser or other container with a spout
Pour it into the compartments of the pan.
The quiches will swell as they cook, so don't fill the compartments of the pan. Fill them in about 2.5-5cm away from the top
Step 5. Fill the compartments of the pan, garnish the quiche with 50 g of emmental flakes:
a pinch is enough for each compartment.
Emmental can be replaced with another cheese of your choice. Cheddar and mozzarella are particularly good
Step 6. Bake the quiche
Let it cook for about 15 minutes, then rotate the pans. Cook them for another 15 minutes or until the quiches are golden on the surface.
At the end of cooking they will also swell
Step 7. As you remove the pans, run a sharp knife around the circumference of each quiche
Turn the pan over to remove the canapes and place them on a cooling rack.
Let them cool for at least 5 minutes. You can serve them hot, but not hot, otherwise you will get burned
Step 8. Once cooled, serve and serve hot or at room temperature
You can prepare them the day before. Keep them in the fridge and heat them for a few seconds in the microwave before serving
Method 4 of 4: Prepare the Stuffed Cherry Chillies
Step 1. Cut 110 g of Auricchio with a sharp knife
You should try to get small enough pieces that you can easily stuff the peppers. Each cube should be about 3cm in size.
Auriccio can be replaced with mozzarella
Step 2. Once the cheese has been prepared, cut 5 thin slices of ham in half
Place several cubes of cheese in the center of each slice and roll it into a roll.
Step 3. Stuff the chillies
Cut the stem from 10 hot cherry peppers and remove the seeds to create a cavity. Stuff each chili with the ham and cheese rolls.
Don't like spicy? Cherry peppers can be substituted for regular peppers
Step 4. Place the stuffed peppers in a bowl and pour 120ml of olive oil into them
Cover the bowl with cling film and put it in the fridge. Leave to marinate overnight.
Step 5. 1 to 2 hours before serving the peppers, remove the bowl from the refrigerator to serve at room temperature
Serve them.
Since they are greasy and grabbing them with your fingers is impractical, you may want to serve them with toothpicks
Advice
- All the appetizers can be made the night before, so you don't have to stress out with the preparations on the day of the party.
- Nibbles that should not be baked in the oven, such as skewers of mozzarella and cherry tomatoes, lettuce boats stuffed with blue cheese and bacon, or stuffed cherry peppers, are the easiest to prepare. They are particularly suitable for summer parties.
- The appetizers will likely be eaten with your hands, so have a good amount of napkins available.
