Chicken salad is one of those preparations that are as simple as they are delicious. It is also a great way to eat healthily, without upsetting anyone, and sometimes it can also be a great habit to reuse leftovers. Chicken salad is a perfect meal for any time of the year and can be eaten for breakfast, lunch or dinner. Here's how to make some chicken salad variations, each one perfect for any moment.

Chicken salad
- 4 boneless chicken breasts
- 3 hard-boiled eggs
- 1/2 bunch of grapes (cut the grains in half) or 40 g of raisins (optional)
- 120 g of light mayonnaise
- 1 tablespoon of Cucumber and Dill sauce
- 1 tablespoon of lemon juice
- 1 tablespoon of honey
- 1/4 tablespoon of celery seeds
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of Basil
- Salt and pepper
Chinese Chicken Salad
- 4 tablespoons of low salt soy sauce
- 2 teaspoons of Sesame Oil
- 450 g of boneless and skinned chicken breast
- 1/2 Chinese cabbage finely sliced
- 1/4 of sliced red cabbage
- 1 large carrot, sliced
- 3 Finely chopped shallots, including green stems
- 2 Tangerines peeled and cut into small pieces
- 170g Chinese Noodles (reheat to make them crunchy)
- 80 ml of red wine vinegar
- 1 teaspoon of minced garlic
- 1 teaspoon of minced ginger
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of cane sugar
- 1 1/2 teaspoon of Chilli Sauce
- 35 g of toasted almonds

Method 1 of 3: Chicken and Noodle Salad
Step 1. Assemble all the ingredients on the work surface
Step 2. Cook the noodles
When the noodles are cooked, keep them in the refrigerator to let them cool.
Step 3. Prepare all the vegetables and chicken you want to use in your salad by cutting them into small pieces
Step 4. As soon as they have cooled, pour the noodles into a bowl
The size of the container will depend on how many ingredients you want to use. Pour all the vegetables and chicken into the bowl.
Step 5. Pour as much mayonnaise as you like, or whatever you think is needed, over the salad
You will need to have a light layer of mayonnaise on most of the ingredients, but you will not have to get a mayonnaise salad with vegetables and chicken.

Method 2 of 3: Chicken Salad
Step 1. Boil the chicken very slowly in salted water, or chicken broth, until it begins to flake

Step 2. Remove the chicken from the water and let it drain

Step 1. Preheat the oven to 180 ° C
Step 2. Mix a tablespoon of sesame oil with half a tablespoon of soy and use the mixture to brush the chicken breasts
