The rump is like a diamond in the rough - at first glance it might look like a cheap, lean, and probably stringy piece of meat if cooked the wrong way. However, if you look better (and cook it right), this cut of meat can become a delicious, succulent delicacy. Check out these three ways to cook it.

Method 1 of 3: Cooking the Baby Walker in the Oven
Step 1. Heat the oven to 260 ° C
This method involves cooking the meat at a high temperature in the oven and then turning it off and letting it rest in the heat. The result will be similar to prime quality ribs (i.e. pink and juicy on the inside and crunchy on the outside). This method takes about three hours.
Step 2. Wash the walker
You have to revive the meat with cold water. If you use hot water, you risk promoting the growth of bacteria that can harm you. Dab the meat with kitchen paper to dry it.
Step 3. Add the flavors
For a simple yet tasty combination, opt for salt, pepper, 1/2 teaspoon of dried thyme and garlic. Depending on your taste, garlic can vary from 4 to 6 cloves. Mix the ingredients together and then rub them all over the meat.
Some prefer to use the seasoning for meats (in which we usually find a mix of aromatic herbs, salt and pepper). You can also try adding a dash of olive oil to any dressing you choose. It will help keep the spices attached to the meat
Step 4. Place the seasoned meat in a baking dish
Make sure the fat is facing up. If you don't have a baking sheet, you can use a Dutch oven - you'll get the same effect!
Step 5. Put the meat in the oven
Once the ideal temperature is reached, place the baby walker on a wire rack. To cook it evenly, place it in the center of the oven.
Step 6. Set the cooking time for your roast:
7 minutes for each pound of meat (7 minutes for about 453 grams). Once you've cooked your roast following these directions, turn off the oven, but don't open it and don't take the roast out. The heat must remain inside the oven so that the meat continues to cook slowly, creating a crispy crust, while inside the meat will remain moist and pink.
Step 7. Let the walker sit in the oven for another 2.5 hours, without opening the door
After this time, remove the roast from the oven and check that the internal temperature is 65 ° C. Serve the roast cut into thin slices and enjoy your meal!
Method 2 of 3: Cook the walker on the stove
Step 1. Remove excess fat from the piece of meat
Cooking the walker on the stove requires the roast to absorb the sauce; the fat would prevent the sauce from penetrating completely. After removing the fat from the silverside, season it with pepper.
Step 2. Place a large Dutch oven on the stove
Generally a Dutch oven has a volume of at least 5 liters. Put 2 teaspoons of olive oil in the pot and add the roast. Bring it to medium-high heat.
Step 3. Add the other ingredients
When the meat is browned, add half a liter of water, 2 cubes of meat stock and 1 bay leaf and bring to a boil. When it boils, cover with the lid and let the rotisserie simmer for 50 minutes over low heat. By simmering the meat, it will gain flavor and soften.
Step 4. If desired, you can also boil carrots and potatoes along with the roast
Simmer the roast for 20 minutes, then add the pieces of carrot, potatoes, celery etc. Bring to a boil, then lower the heat and simmer for another 30 minutes.
Step 5. When cooked, remove the roast from the pot
If you have a cooking thermometer, remove the roast from the heat when it reaches 52.7 ° C. If you don't have a thermometer, simply cut the meat: if it is still red inside, keep it on the stove until it reaches a nice pink color.
Step 6. Let the walker sit for 15 minutes for the meat to take on even more flavor
then cut the roast into thin slices.
Method 3 of 3: Cook the Roast in a Slow Cooker
Step 1. Turn on the pot and set it to a low temperature
This cooking mode will take 8 to 10 hours and the roast will be incredibly succulent. While the pot heats up, season the silverside with salt, pepper, and any other spice you want.
Step 2. Add the other ingredients
Cut an onion and use it to create a layer on the bottom of the pot. Add the seasoned meat with 1 cup of water, 2 tablespoons of soy sauce (optional) and two bay leaves for flavor.
Step 3. Other recipes also suggest adding garlic, thyme and wine for flavor
You can also add carrots and celery to taste.
Close the pot with its lid and cook the rotisserie on a low temperature for 8 hours. After 8 hours, take it out and let it rest so that it gets a good flavor
Step 4. Prepare the sauce
The onion, spices and meat juices will mix to create the gravy. To make this sauce thicker, add, after removing the roast, a mixture obtained by mixing 2 tablespoons of cornstarch and 2 of water in a separate bowl. Stir the ingredients until they begin to boil and thicken.
Step 5. You can use ⅓ cup of flour instead of cornstarch

Advice
- Always let the meat rest before cutting it, so that the sauce is evenly distributed. The roast will thus be juicier and tastier.
- Make small, deep cuts in the walker and put some pieces of garlic in them before cooking it; the garlic will further flavor the meat.
