When it comes to food, we often find ourselves faced with the difficult choice between delicious but unhealthy dishes and healthy but not very tasty dishes. This quick and easy recipe explains how to make a vegetarian curry that, in addition to being healthy, will make you lick your lips.
Ingrediants
- 2 medium eggplants cut into similar sized sticks
- 3 carrots, peeled and cut into similar sized sticks
- 1 cup of green beans cut into similar sized pieces
- 1 medium potato peeled and cut into similar sized sticks
- 2 cups chopped cauliflower
- 1 cup of peas
- 5 coarsely chopped medium tomatoes
- 2 chopped chillies
- 1 teaspoon of cumin seeds
- 1 teaspoon of salt (adjustable to your preference)
- 1 teaspoon of garam masala
- A pinch of turmeric
- 2 tablespoons chopped fresh cilantro
- ½ teaspoon of chopped ginger
- 2 tablespoons of vegetable oil
Steps
Step 1. Heat 2 tablespoons of vegetable oil in a medium skillet
The oil will be ready when it starts bubbling
Step 2. While the oil heats up, take the tomatoes and an onion
Blend them to make a puree.
Step 3. Once the oil is heated, add 1 teaspoon of cumin seeds, a pinch of turmeric and ½ teaspoon of chopped ginger
Mix.
Stir until the cumin seeds start popping
Step 4. Add the tomato and onion puree, stir for 1 minute, then cover the pan and simmer for about 6 minutes
Step 5. Add the eggplant, carrot and potato sticks, green beans and chopped cauliflower
Pour in 80 ml of water, stir, cover the pan and let the curry cook for about 10-15 minutes.
Step 6. When the vegetables are cooked, add 1 teaspoon of garam masala, 1 teaspoon of other mixed spices (chili powder, coriander powder, and turmeric powder) and 1 teaspoon of salt
Stir in the curry.
Step 7. Plate the curry and garnish with 2 tablespoons of chopped fresh cilantro
Advice
- If you prefer a less spicy curry, don't add the chopped chili.
- Vegetarian curry can be served on a bed of hot rice or with flat bread (such as naan or chapati).
- Most of the less common ingredients and spices in this recipe (turmeric, garam masala, and caraway seeds) can be found at ethnic stores.
