Steps
Step 1. Wash 1.4 kg of medium-sized potatoes
Do not deprive them of the peel
Step 2. Pour the whole potatoes into a pot filled with cold salted water
Step 3. Bring the water to a boil and cook the potatoes until almost tender
This will take approximately 20 minutes.
Step 4. Drain the potatoes from the water
Let them cool slightly to avoid burning yourself when handling them.
Step 5. Peel the potatoes while they are still hot
Step 6. Cut them into small even pieces
Step 7. Preheat a non-stick pan
Choose a pan that is large enough so that the potatoes do not overlap in cooking.
- Place the dry skillet over medium-high heat. Do not add oil or butter during this heating phase.
- Pour a couple of drops of water into the pan and find out if they sizzle and evaporate instantly, if so it means that the pan is hot enough.
Step 8. Pour 4 tablespoons of oil (60 ml) into the hot pan
Step 9. Add the butter (50g)
Wait for it to start forming a light foam.
Step 10. Arrange the potatoes in a single layer
Step 11. Cook them on medium-high heat
The cooking time required will be approximately 7 minutes.
Only turn the potatoes when the undersides begin to brown. Turn them 2 or 3 times until golden evenly
Step 12. Transfer the cooked potatoes to a bowl using a slotted spoon
You may need to remove excess oil using paper towels, tampon, or place them on a paper-lined plate before transferring them to the bowl.
Step 13. Season the sautéed potatoes with black pepper and sea salt
If desired, add 4 tablespoons of chopped fresh parsley.
Step 14. Serve your yummy sauteed potatoes

- When you toss an ingredient in the pan, you need to adjust the amount of fat needed based on the size of the pan. The chosen grease should be just enough to cover the bottom. This quantity may vary from that indicated in the recipe.
- You can change the taste of your sauteed potatoes by replacing the oil and butter with a different fat, such as beef, pork or goose animal fat.
