Typical of the summer season, blackberries can be picked from brambles in many areas of Europe. They are excellent to eat natural, and can be used to prepare delicious desserts, jams and excellent herbal teas. This article will teach you how to make blackberry wine, a perfect drink to cheer up a summer barbecue in good company.
Ingrediants
To prepare 6 bottles of wine (4.5 liters):
- 2 kg of Blackberries
- 1, 1 kg of sugar
- 3, 5 liters of water
- 1 pack of Yeast, preferably for red wine
Steps
Method 1 of 4: Preparation
Step 1. Pour the blackberries into a sterile plastic container and mash them with your hands
Add 1 liter of cold distilled water and mix carefully. Let the mixture sit for two hours.
Step 2. Heat one third of the sugar in one and a half liters of water
Bring the mixture to a boil for a minute and then remove it from the heat and let it cool.
Step 3. Add the yeast to 120ml of warm (not boiling) water and let it sit for 10 minutes
Step 4. Pour the cold sugar syrup over the blackberries
Add the yeast. Make sure the mixture has cooled properly, otherwise the heat will kill the yeast.
Step 5. Cover the container with a clean cloth and store it in a warm place for seven days
Method 2 of 4: After 7 days
Step 1. Strain and squeeze the fruit pulp through a fine mesh strainer, or with food grade tissue, to separate the juice from the solid parts
Use the solid parts as compost.
Step 2. Pour the filtered liquid into a 4 liter jug
Step 3. Bring another third of sugar dissolved in half a liter of water to a boil
Let it cool before adding it to the jug.
Step 4. Cover the mouth of the carafe with a cotton cloth and secure it with a rubber band
In this way the carbon dioxide will be free to escape, while the wine will be protected from any external contamination.
Step 5. Let the wine rest for 10 days
Method 3 of 4: After 10 Days
Step 1. Transfer the wine to a second container
Sterilize the jug and then refill it with wine.
Step 2. Bring the last third of sugar dissolved in the remaining half liter of water to a boil
Let it cool before adding it to the wine.
Step 3. Cover the jug again with the cloth fixed by the elastic and wait for the wine fermentation to be complete
When the fermentation is finished the wine will stop producing bubbles.
Method 4 of 4: After Fermentation
Step 1. Transfer the wine as in the previous section
Step 2. Sterilize the wine bottles and add a funnel
Step 3. Pour the wine into the bottles, filling them up to the neck
Step 4. Stop and store the wine bottles
Advice
- Berries wine should be drunk within the year, but can be stored and aged for up to two years.
- When harvesting blackberries, choose only those that are completely black and swollen. Unripe blackberries will not ripen after being harvested.
- Make sure all your utensils are perfectly clean and sterilized otherwise your wine will give off an unpleasant smell.
