Knowing how to choose the best asparagus is important, and it's easy if you know how to do it.
Steps
Step 1. Look for asparagus that are firm to the touch
They must be straight and must not bend. If you try to bend the tips, they should break. The stems should be firm but more tender.
Step 2. The color must be light green
Step 3. Check the tips
They must be tightened. Dark green tips or with a touch of purple are synonymous with good quality. If the tips are yellowed or dry, the asparagus is not fresh.
Step 4. Choose the diameter of the asparagus according to your needs
The size does not affect the hardness of the shank. Rather, you should check out the features described above. Thinner asparagus are preferable for dish presentation, while thicker ones will cost less, especially if the price is per bunch.
Step 5. In general avoid shriveled, stained or damaged ones
But if you only need them for a soup and they have a discounted price, then get them. If they are in bloom, avoid them, as they will surely not be fresh and tender.

- The asparagus will keep 2 or 3 days in the refrigerator.
- Thinner stems are more tender than large ones.
- White asparagus is generally more difficult to cook as the more woody outer part of the stem needs to be removed. Sometimes, however, they are sold already peeled and ready to cook. Ask the clerks if it is not clearly indicated.
