Preparing eggs in the basket is a very ingenious way to cook them and involves frying them in a slice of bread. This recipe is known by many different names, such as carriage eggs or egg nests, just to name a few. Whatever you want to call it, this tasty and fun preparation will provide you with all the protein for a nutritious breakfast. Even the most demanding palates will be satisfied!

Method 1 of 3: Traditional Recipe
Step 1. Cut a hole in the bread
In the center of the slice of bread, cut a hole with a diameter of about 5 cm. Alternatively, cut out a square with the knife.
- Choose the bread you prefer. White, wholemeal, sourdough, baguette, rye and so on, anything you like is suitable for this delicious dish.
- You can punch the hole with a glass, jar, or cap (such as whipped cream spray). Press these items onto the slice of bread and you shouldn't have a hard time cutting out a hole.
- If you want to make something special for the kids, use cookie cutters with fun shapes. You can also advise them to use the leftover bread cutout to dip it into the yolk.
- If you want to make a romantic breakfast, use a heart-shaped cookie cutter. If you don't have this tool available, try a knife.
Step 2. Fry the bread
Pour the butter into the pan and, while it is melting, butter both sides of the slice of bread. Place the bread in the pan and fry it over medium heat until it starts to turn golden. Flip the slice and cook the other side until it is well toasted.
- You can also butter the "cutout" of bread and fry it along with the eggs as an added treat. Many like to dip it in the yolk.
- You can replace the butter with seed, coconut, or grapeseed oil.
Step 3. Add the egg
Before dropping it in the center of the hole, add more butter to the pot, right in the bread hole. Break the egg and place it in the center of the hole.
- If you prefer a smaller amount of egg white, separate it from the yolk. Pour only the yolk with a little egg white into the hole. In this way, cooking will be faster.
- If you want to vary the preparation slightly, add some ham or bacon on top of the bread, also consider the cheese.
Step 4. Fry the egg
Let it cook for another minute or two. Then, carefully, turn the bread over to the other side. Make sure that the egg white is perfectly cooked, it must not be liquid or gelatinous.
- Before turning the slice of bread with the egg, lift it slightly with a spatula. Check that the egg has solidified and just golden before proceeding. When ready, the egg has stabilized inside the bread.
- If you love semi-liquid eggs, reduce cooking times; if you love hard yolks, increase them.
- Before turning the slice of bread upside down, sprinkle it with more butter or oil so you can be sure it won't stick to the pan.
- If desired, season with salt and pepper or even paprika and other spices as you cook each side of the eggs.
Step 5. Serve
Put the eggs in the basket on a plate. You can eat them with a fork or as a toast.
Method 2 of 3: Baked Recipe
Step 1. Preheat the oven to 205 ° C
Grease some ceramic baking cups or a muffin pan with oil. Alternatively, line them with parchment paper.
Step 2. Put the bread in the baking cups
Butter it on both sides and slide it into the muffin pan or ceramic baking cups. Gently press each slice letting the edges curl in on themselves.
- Since the recipe calls for baking in the oven instead of frying, it is a healthier version with a lower calorie content. To further reduce the energy value and to prepare an even healthier dish, choose a bread with low calories and carbohydrates.
- You can also avoid buttering the bread, which will eliminate other calories. Put it in the natural baking cups.
- Another alternative is to make a hole in a French loaf instead of using the sandwich bread inside the cups. This way, however, know that you will not have a healthier, lower carbohydrate or lower calorie dish.
Step 3. Bake the eggs
Break an egg into each muffin tin or into each cup. Put them in the oven for about 20 minutes or until the egg whites are cooked. If you love tougher egg yolks, increase the cooking time.
Step 4. Remove the eggs from the oven
After letting the cups or pan cool, remove the bread from the containers and transfer it to plates. Use a knife to peel it off the edges if it is stuck.
Sprinkle the eggs with aromas such as salt, pepper, paprika or garlic to enhance the flavor. You can also add grated cheese, ham or bacon, tomatoes and avocado
Method 3 of 3: Low Carbohydrate Recipe
Step 1. Sauté the vegetables
Cut the Brussels sprouts in half or into thin slices. Grate the sweet potato or slice it finely. Fry the vegetables in the coconut oil for 3-5 minutes.
- Add flavorings if desired. You can use salt, pepper, garlic, cumin, paprika, curry, chilli powder or any other spice you like.
- To cook this carb-free dish, replace the bread with vegetables. Choose two vegetables with different nutritional values. Try Brussels sprouts, sweet potatoes, kale, broccoli, cauliflower, spinach or whatever you love the most.
Step 2. Cook the eggs
Lower the heat and make holes in the vegetables into which you will drop the eggs. Add an egg or two in the holes. Cover the pan and let the mixture cook. The eggs will partially steam and will take about 5 minutes. Monitor cooking until the eggs are cooked to your preference.
Step 3. Bring to the table
With a spatula, remove the eggs and vegetables from the pan and place them on a plate. Sprinkle them with other flavorings if you like.
You can sprinkle the eggs with a small amount of cheese or add a few slices of bacon during cooking. If you prefer, add both the cheese and then the bacon. If you've opted for this type of garnish, go for an all-natural cheese and high-quality, nitrate-free bacon
Advice
- Set aside a little butter in case you need to add some during cooking.
- Toast the scraps of bread while you cook the eggs. They are excellent for dipping in egg yolks.
- If you want, add other ingredients as a garnish to the dish to enhance the flavor. You can consider grated cheese, spicy sauce, garlic sauce, sliced tomato, fruit, sweet syrups, spices, ham or bacon.
- For a quicker and slightly healthier version, toast the bread and then immediately fry the eggs.
- Once you put the egg in the hole, you need to give it time to blend with the bread during cooking. If you try to turn it too soon, the egg will come out of the hole and you will make a mess.
