Fried rice is a tasty traditional dish prepared with steamed rice and then fried in the wok; don't worry though, you can also use a frying pan. Simple Fried Rice
- 1 kg of cooked white rice
- 2 carrots
- 1 medium yellow onion
- 1 clove of garlic
- 5 g of fresh ginger
- 100 g of bean sprouts

- 1 pinch of black pepper
- 5 g of salt
- 45 ml of soy sauce
- 30 ml of extra virgin olive oil
- 30 ml of Sesame Oil
- Fresh spring onion for decoration
- 220 g of cooked chicken
Fried Rice with Crispy Pork
- 23 ml of Peanut Oil
- 2 Lightly beaten eggs
- 75 g of chopped onion
- 3 minced garlic cloves
- 10 g of minced ginger
- 2 cooked pork chops, cut into small pieces
- 150 g of cooked brown rice
- 60 ml of low salt soy sauce
- 10 ml of Sesame Oil
- Salt to taste.
- Pepper as needed.
- 5-10 g of chopped coriander leaves
Indonesian Fried Rice
- 225 g of Basmati Rice
- 180 ml of water
- 420 ml of chicken broth
- 1 l of Peanut Oil
- 45 ml of Extra Virgin Olive Oil
- 8 krupuk (Indonesian shrimp crackers; optional)
- 200 g of finely sliced shallots
- 2 large cloves of garlic, minced
- 450 g boneless, skinned and sliced chicken breast
- 450 g of medium-sized shrimps
- 2 minced hot peppers
- 6-7 g of salt
- 30ml ketjap manis (Indonesian sweet soy sauce)
- 15 ml of fish sauce
- 4 Sliced shallots
Steps
Method 1 of 4: Simple Fried Rice
Step 1. Cook 900 g of white rice
Pour the rice into the boiling water and cook it following the directions on the package. Some varieties of white rice require a cooking time of only about 10 minutes, while others over 30. Alternatively, you can use instant microwave rice, knowing that the result will not be as tasty.
Step 2. Prepare the vegetables
First, wash or prepare the carrots, onion, garlic clove, ginger, and bean sprouts. Chop the carrots and onions and chop the ginger. Then set the ingredients aside.
Step 3. Pour the oil into a large skillet
Choose a deep enough, or rather a wok. Place it over medium heat.
Step 4. Cook the vegetables in the pan for 3 minutes
Add the carrots, onions, garlic, bean sprouts and ginger. Season with salt and black pepper. The vegetables should soften slightly without frying.
Step 5. Add the cooked chicken to the pan
You can use leftover chicken cooked the previous day, or buy it and cook it specifically to make fried rice. Cut the chicken into thin strips and put it in the pan.
Step 6. Pour the sesame oil into the pan
Add it slowly, gradually, when you think it's necessary, rather than all at once.
Step 7. Add three eggs
Break them into a bowl and beat them to mix. Then pour them into the pan.
Step 8. Incorporate the cooked rice as well
Fry the rice and other ingredients for about 2-3 minutes, long enough to heat the rice and mix the ingredients. Keep stirring and add the soy sauce to the ingredients, then sauté for another 30 seconds. After that, remove the pan from the heat.
Step 9. Serve
Pour the rice into a dish and decorate it with fresh spring onion. Enjoy this recipe as a main dish.
Method 2 of 4: Fried Rice with Crispy Pork
Step 1. In a large skillet, heat 1/2 tablespoon of peanut oil over medium-high heat
Step 2. Cook the eggs
Add 2 lightly beaten eggs to the pan. Tilt and move the pan to distribute them evenly across the bottom. Cook the eggs in a single, even layer. After about 2 minutes, turn them upside down in the pan. Then, remove them from the pan and cut them into small pieces and set them aside.
Step 3. Add the chopped onion, garlic and ginger to the pan
Cook the ingredients in the remaining peanut oil, blending them for 2 minutes.
Step 4. Add the chopped pork to the rice
As indicated above, the pork will need to be cooked already. Brown it in a pan for another 3 minutes or until golden.
Step 5. Add the rice, soy sauce, and sesame oil to the pan
Add the cooked brown rice, low-salt soy sauce and sesame oil; let it cook for a couple of minutes. Season the fried rice to taste, with salt and black pepper. Then, remove it from the heat.
Step 6. Add the chopped coriander leaves
Mix it with the other ingredients by mixing.
Step 7. Serve
Arrange the fried rice on a serving dish. Spread the chopped eggs on the surface.
Method 3 of 4: Indonesian Fried Rice
Step 1. Wash and then drain the basmati rice
Step 2. Bring the rice, water and chicken broth to a full boil in a thick-bottomed saucepan (4 liters)
Step 3. Cover the pot and reduce the heat to low
Cook the ingredients until all the liquids have been absorbed and the rice is tender. This should take about 15 minutes. Then remove the pot from the heat and let it rest, covered, for 5 minutes, giving the rice time to absorb all the aromas.
Step 4. Transfer the rice mixture to a large bowl
Wait for it to reach room temperature - this should take about 30 minutes. Put the mixture in the refrigerator for about 8 - 12 hours.
Step 5. Heat 1 liter of peanut oil in a large saucepan (4 liters) using high heat
The oil must reach a temperature of 190 ° C.
Step 6. Cook the krupuk (optional)
Gently dip 2 krupuk into the oil. Fry them until they float to the surface, curling and expanding, which should take about 20 seconds. Then, turn them upside down in the oil and continue cooking until lightly browned - that is, for about 10 seconds. Drain the excess oil with a slotted spoon and then transfer them to a paper towel.
Fry the remaining krupuk following the same directions. When all are cooked, let them cool and then break them into small pieces
Step 7. Separate the rice into individual grains
Do it using your fingers? This way the rice will absorb the other ingredients more easily.
Step 8. Heat the extra virgin olive oil in a wok using a high heat
The oil should be hot, but it shouldn't reach its smoke point. Then add the finely sliced shallot and sauté it over high heat for about 1 minute. Also add the garlic and fry it with the onion for another 30 seconds.
Step 9. Add the chicken
Pour the chicken into small pieces, without bones and skin, in the wok, cook until the meat has lost its pink color; this should take about 2 minutes.
Step 10. Add the shrimp and chillies and sauté them into the mixture
Add 450 g of medium-sized shrimp, peeled and deprived of the intestines, 2 chopped hot peppers and salt, cook for another 2-3 minutes, to allow the shrimp to cook completely.
Step 11. Add the remaining stock and the ketjab manis
Add 420 ml of chicken broth and ketjab manis sauce (Indonesian sweet soy sauce) to the mixture and cook until the rice is completely heated; this should take about 2 minutes.
Step 12. Remove the wok from the heat
Add the fish sauce and sliced shallots and then mix to mix with the other ingredients.
Step 13. Serve
Serve the Indonesian fried rice on a serving dish and top it with the krupuk bits, cucumber slices and hard-boiled eggs.

Advice
