Nuts are delicious both eaten plain and added to baked goods. They consist of several layers, including the outer shell and a woody one.
Steps
Method 1 of 2: Remove the Outer Shell
If the walnuts have just been picked from the tree, then you need to remove the outer shell. Look for mature ones that have a yellowish-green outer shell. Those with a black shell are not as tasty.
Step 1. Place the whole walnut on an asphalt surface
The juices that come out would stain the concrete.
Step 2. Crush the nut with your foot with a twisting motion to pulp the outside
Step 3. Collect it and place it in a large bucket
Step 4. Throw the outer shell in the trash or compost bin
Step 5. Arrange all the nuts on a large table or other flat surface
Wear rubber gloves to protect your skin from nut juice and work in an area you don't care about getting dirty.
Step 6. Rub the wooden shells with a metal brush to remove any residue from the outer shell
Step 7. Spread the walnuts in a single layer on a flat surface and store them in a dark, cool and well-ventilated place
Make sure they don't come into contact with each other.
Step 8. Let them mature for 5-6 weeks
If you try to open a fresh walnut, the pulp will be quite chewy. Seasoning allows you to have crunchy kernels.
Method 2 of 2: Remove the Wood Shell
Walnuts are known to be very hard to break. You can use a nutcracker or a hammer. If you put this dried fruit to soak, you prevent the kernel from pulping during shelling.
Step 1. Leave the walnuts to soak for 24 hours in hot water
This process softens the shell making the next steps easier.
Step 2. Remove the walnuts from the water
Arrange them on a flat surface with the pointed side up.
Step 3. Hit the tip with a hammer until the shell breaks along its axes of symmetry
Step 4. Open the shell with your fingers
Step 5. Put the pointed end of a shelling machine under the kernel
Run the shelling machine along the edges of the kernel to detach it from the shell.
Step 6. Place the kernels in a separate bowl
Repeat the process until you have shelled all the nuts.

- Walnuts stored in the fridge last up to nine months, while frozen ones last up to two years. Remember to put them in sealed plastic bags.
- Before deciding to store the kernels at room temperature, toast them in the oven at 100 ° C for 10-15 minutes. Eat them within a few weeks.
