If you are tired of the usual ready-made macaroni and cheese prepared with artificial flavors or if you are craving a delicious sauce with which to season a vegetable dish or in which to dip crispy nachos, why not try this recipe. The advantages will be enormous: you will know exactly what it contains and you can prepare it quickly and easily, in just a few minutes, just long enough to cook the dish you want to flavor.
Ingrediants
- 1-2 tablespoons of Corn Starch
- Milk
- Cheese (a cheese with a strong taste, such as Parmesan or Fontina)
- Salt to taste.
Steps
Step 1. Choose a small to medium sized container suitable for microwave cooking
A glass cake pan or pan will do just fine. The container chosen must have high sides, a flat plate or a plate are therefore not suitable for the purpose.
Step 2. Inside the container of your choice, grate a generous amount of cheese
You don't need to weigh it. Grate a layer about 2.5 cm thick, depending on the amount of sauce you want to make and the size of the container you choose.
Step 3. Add enough milk to completely coat the cheese
Step 4. Before adding the cornstarch, mix it with 1-2 tablespoons of milk making sure it dissolves completely
Step 5. Mix all the ingredients using a fork
Make sure that the cornstarch is incorporated and dissolved perfectly in the milk-cheese mixture, without forming any residue.
Step 6. Cook the ingredients in the microwave for 2 minutes
Cover the container to avoid having to clean the inside of the oven after cooking.
Step 7. Stir again with a fork
Blend the sauce carefully to break up any lumps of cheese sticking to the bottom of the container.
Step 8. Continue cooking in the microwave and then stir carefully
Repeat the steps until the sauce reaches the desired consistency. Cook the sauce at 2-minute intervals, stirring between each. It will take 2 to 4 cooking cycles, depending on the power of the oven and the amount of sauce you are making.
Step 9. Season with salt
A pinch of salt is able to enhance the flavor of the cheese.
Step 10. Serve it hot
Pour the sauce over pasta, vegetables or any other preparation of your choice, which can be combined with an excellent cheese sauce.
Advice
- Parmesan and fontina are a great choice in this recipe, but experiment with other varieties of cheese as well. If you wish, you can also prefer a mixture of several cheeses, mixing your favorites for example, in order to obtain a very intense and complex flavor.
- Before you start preparing the sauce, take care of cooking the pasta or vegetables.
- Use a cheese that has a more intense flavor than you want to give the sauce. Melting in the milk, the taste will become more delicate.
- If you like spicy, sprinkle the nachos with a pinch of chili powder. If you love Mexican cuisine, try adding black beans, guacamole, spicy tomato sauce, onion and sour cream to the dish. You can also incorporate any other ingredients that satisfy your palate.
- If you want to make a great baked pie, pour the rice or pasta directly into the sauce pan, along with your chosen vegetables or meat. Mix carefully and dust the recipe with breadcrumbs or crumbled crackers. Bake the pie in the oven until the surface is golden and crunchy.
- If you want to enrich the flavor of this cheese sauce and dedicate it to an adult palate, you can add a small amount of excellent quality dry white wine to the recipe.
- You can also cook the sauce on the stove, in this case use a very low heat to avoid burning it or sticking to the bottom of the pot. Also remember to mix frequently.
- Use the microwave on low power and cook the sauce in small intervals. This will prevent it from boiling.
- Try pairing this sauce with french fries. It's great!

- Always be cautious when handling hot dishes or containers.
- Overcooking the sauce will cause it to come to a boil, causing hot splashes that could end up on the microwave plate encrusting it.
