Steps
Step 1. Wait until the sides of the pancake are dry and bubbles have started to appear on the top
Take a fork and place it under the rim of the pancake. Lift it up. If the underside is gold, it's time to turn it over.
Step 2. Put a spatula under the pancake
Don't hesitate or you'll ruin it (if you put some butter or margarine in the pan, this step will be easier).
Step 3. Lift the spatula with the pancake on it
Quickly turn your wrist and return the pancake to the pan. Lift the pancake only about six inches from the surface of the pan and make sure you don't stop the movement halfway to avoid breaking it. After putting the pancake back into the pan, DO NOT press it! The pancake will not cook as quickly, but it will become tougher and less appetizing.
Step 4. Wait until the other side is completely cooked
Use the fork as you did before to check the doneness.
Step 5. Don't turn the pancake again
Handling it too much will make it hard and not soft and won't speed up cooking.
