When a banana reaches maturity the starch contained within it is transformed into sugar and the visible result is that of a creamy, sweet and very fragrant fruit, moreover easy to digest for our body. Often, however, bananas that can be purchased at the supermarket are still unripe. To make them ripen quickly, just treat them with ethylene gas, a natural substance that many fruits release spontaneously when they are ripe. Let's see how to proceed.
Steps
Step 1. Prepare a paper bag, such as one for bread, your unripe bananas, a ripe tomato and a ripe apple
Step 2. Place the bananas in the bottom of the paper bag
Step 3. Place the tomato and apple in the bag as well
Make sure the tomato is not overripe to prevent it from molding in the paper bag.
Step 4. Fold the open side of the paper bag over on itself so that the ethylene gas produced by the tomato and apple does not disperse and remains inside
Step 5. Place the fruit bag in a warm place
The heat favors the production of ethylene gas by the tomato and apple, also accelerating the ripening process of bananas. Normally the heat rises, so choose a place that is high up, to let your fruit receive more heat.
Step 6. Check the ripeness of the bananas after about 12 hours
Using this method, you can normally ripen green bananas, turning them yellow or even making the classic dark dots appear, in 24 hours.

Advice
- Storing bananas in the refrigerator slows down the ripening process.
- You can hang your bananas, to simulate the position they would have if they were still on the tree, this way the ripening process will be more natural and will last about 2 or 3 days.
Warnings
- While some people prefer unripe or not fully ripe bananas, they are harder to digest.
- Don't store unripe bananas in the refrigerator if you want to ripen them. The cold temperature interrupts the ripening process and it will no longer be possible to ripen them.
