Mango is a nutritious tropical fruit known for its sweetness and starchy texture. It is rich in fiber, vitamin A and natural sugars, making it an excellent healthy snack. The best way to preserve ripe mangoes is to dehydrate them using an oven or dryer.
Steps
Part 1 of 2: Cutting the Fruits
Step 1. For the dehydration process, purchase a mango number between 2 and 40
The number of fruits should be commensurate with the number of drying trays available to you. If you are going to use the classic oven, 2 or 3 mangos will cover an entire pan.
Step 2. If they aren't fully ripe yet, let them ripen on the kitchen counter
A ripe mango will give slightly when pressed with your fingers. Unripe mangoes, on the other hand, are very hard to the touch.
Step 3. If you are planning to dehydrate a large number of fruits, purchase a special mango slicer, you can find it online or in well-stocked kitchenware stores

Step 4. Slice the mango after placing it on the cutting board with the end facing down
Score one side about 0.5cm from the center of the fruit. Place the piece on the cutting board, with the skin facing down, and make parallel cuts from one end to the other.

Part 2 of 2: Dehydrate the Mangoes
Step 1. Take the trays out of the dryer
Try not to let too much time pass between cutting and drying, to keep all the nutrients of the fresh fruit.
Step 2. Arrange the mango strips in parallel rows on the trays
Make sure there is enough space between each piece to allow air to pass through.
Step 3. Set the dryer to 54 ° C for approximately 10 - 14 hours
Step 4. If you want to use the oven, arrange the mango strips on a baking sheet lined with parchment paper
Set the oven to minimum temperature, leave the door partially open and dehydrate the mangoes for 10 - 14 hours.
Step 5. Remove the dehydrated mango pieces from the dryer
Transfer them to an airtight glass jar or food bag. Keep them in a cool, dark and dry place to prolong their freshness and shelf life.
