Steps
Method 1 of 3: Make Lollipops
Step 1. Prepare the molds
Grease them with cooking oil so you can remove the lollipops without breaking them. Place the sticks in the molds.
- This recipe is good for any type of hard candy mold. You can use teardrop, heart or any other shape you like.
- Make sure you use candy molds and not other food molds because candy specific molds are designed to be non-stick.
Step 2. Put the sugar, corn syrup and water in a saucepan
Put the pot on the stove over medium heat.
Step 3. Stir the mixture until the sugar dissolves
Scrape the sides of the pot with a kitchen spatula to prevent the mixture from sticking.
Step 4. Bring to a boil
Stop stirring and check the temperature with the cooking thermometer. Let it boil until it reaches 146 ° C, then immediately remove the pot from the heat.
It is important to remove the mixture from the heat when it reaches the exact temperature. Use a candy thermometer rather than a meat thermometer to make sure the measurement is accurate
Step 5. Combine and mix the extract and food coloring
Step 6. Spoon the mixture into the molds
Step 7. Wait for the lollipops to harden before taking them out
Method 2 of 3: Prepare the Sweet Sticks
Step 1. Combine the sugar with the water in a large jar
Step 2. Mix the mixture well
Step 3. Add the dye and flavors
The candy sticks achieve beautiful shades thanks to the crystallized shapes. Get a matching dye and flavor. You can try some classic combinations or try some of your own:
- Purple sticks and lavender flavor.
- Orange sticks and mandarin flavor.
- Pink sticks and rose taste.
- Red sticks and cinnamon flavor.
Step 4. Place the hanging wooden skewers in the mixture
Place them evenly around the jar and rest them on the rim. Secure them with a piece of adhesive tape so they do not slip against each other while the sugar crystals are formed.
- You can use wooden sticks instead of skewers.
- A fabric string suspended with a pencil is also a good base for sweet sticks.
- Cover the jar with cling film. This is to prevent dust and insects from entering during the crystallization of the sticks.
Step 5. Wait for the sugar to form crystals
It will take a week or two for the sugar to form crystals that look like rocks attached to the stick.
Step 6. Let it dry
When you are satisfied with the size of the crystals, remove the sticks from the jar and let them dry.
Method 3 of 3: Make Butter Candies
Step 1. Butter a 37 X 25 X 2.5 cm pan
If you don't have it of the exact size, find a wide and low one.
Step 2. Combine the sugar with the water and corn syrup in a saucepan
Put it on medium heat and keep stirring until the sugar dissolves.
Step 3. Bring to a boil
Stop stirring and wait for it to reach 132 ° C, check it with a cooking thermometer. Remove the pot from the heat.
Step 4. Add the butter, honey, salt and rum extract and put it back on the heat
Step 5. Stir the mixture until it reaches a temperature of 149 ° C
Step 6. Remove the mixture from the heat
Step 7. Pour it into the greased pan
Step 8. Cool it for 5 minutes
Step 9. Score the candies with a knife
Follow a diagonal pattern and give the candy a diamond shape so it will be easier to divide.
