- 6g of any powdered flavoring, such as an unsweetened powdered drink sachet
- 2 ½ cups of white sugar
- 3 tablespoons of cornstarch
- 1 cup of light corn syrup
- 320 ml of water
- 2 tablespoons of butter (plus extra for greasing hands, baking sheet and scissors)
- 1 teaspoon of salt
- ½ teaspoon of vanilla extract
Steps
Part 1 of 2: Cook the Blend
Step 1. Butter a baking sheet
Rub a knob of butter on the inside of the pan to grease it and set it aside.
Step 2. Combine the cornstarch and sugar in a medium saucepan
Add corn syrup, water, butter, and salt. Mix it well.
Step 3. Heat the mixture
Adjust the heat to medium and stir until the butter melts.
Step 4. Bring the mixture to a boil over medium heat
Once it comes to a boil, stop stirring.
Step 5. Use a cake thermometer
Cook without stirring and check the thermometer. The temperature should reach 93 ° C.
You can check if the mixture is ready even without a thermometer. Pour a few drops of the mixture into the cold water. If it forms a solid but at the same time ductile ball, then it is ready
Step 6. Pay attention
It takes some time for the mixture to reach 93 ° C. However, from that point on it risks getting overcooked very easily.
Step 7. Immediately remove the pot from the heat
Once the desired temperature is reached, you must immediately remove it from the stove.
Step 8. Incorporate the flavoring
Add vanilla and powdered flavoring, then mix until smooth.
Part 2 of 2: Working the Blends
Step 1. Pour the cooked mixture onto the greased baking sheet
Let it cool inside.
Step 2. Wait for 15 minutes
Let the mixture sit until it is cold enough to work easily.
Step 3. Butter your hands
This will prevent the mixture from sticking to the skin.
Step 4. Work the mixture
Extend the mixture with greased hands until it has a lighter color and a satin texture. Fold it back on itself and spread it out repeatedly, as if you were kneading. The procedure should take about 15 minutes.
Step 5. Stretch the mixture into long strings
Once the solution has turned a light color, spread it out to make long strips.
Step 6. Cut the mixture
Cut the mixture into squares using a pair of scissors. Butter them to make the procedure easier.
Step 7. Wrap the candies in wax paper
In this way they will keep well compact.
