Crunchy and tangy, corn fritters can be served with sweet chilli sauce or as a side dish. In this article, you can choose between 2 recipes, or try both and decide which one is your favorite. These delicious pancakes are quick to make and ideal for late, lazy Sunday breakfasts, midnight snacks, or any time of day.
Both recipes are for 4 servings, about 24 pancakes.
Ingrediants
Version 1:
- 90 g of corn flour
- 60 g of flour
- 1/4 tablespoon of baking soda
- 1/2 tablespoon of salt
- 1 tablespoon of ground coriander
- 1/2 tablespoon of cumin
- 1 lightly beaten egg
- A few drops of lemon juice
- 350g of corn
- 4 finely chopped spring onions
- 3 tablespoons of chopped cilantro
- 1 small bowl of sweet chili sauce (for seasoning)
- 100ml of oil for frying
- 120ml of water
Version 2:
- About 435g of canned corn
- 2 eggs
- 2 tablespoons of flour
- salt
- pepper
- 2 tablespoons of vegetable oil
Steps
Method 1 of 2: Version 1
Step 1. Sift the cornmeal, flour, baking soda, salt, ground coriander, and cumin into a bowl
Step 2. Prepare the batter
Add the egg, a few drops of lemon juice and the water.

Mix until you get a smooth batter.
Step 3.
Finish making the batter
Add corn, spring onions, and chopped cilantro.-
Mix it well.
Step 4. Heat the oil in a pan
Step 5. Cook the pancakes
When the oil is hot add 2 tablespoons of the dough to each pancake and flatten them with the back of a spoon.
Step 6.
Cook for about 2 or 3 minutes and turn them to the other side
They will be cooked when they have a golden color on both sides.
Step 7. Drain the pancakes
When the pancakes are cooked, soak up the excess oil with kitchen paper.
Step 8. Serve with the sweet chili sauce and garnish with coriander leaves or parsley
Method 2 of 2: Version 2
Step 1. Open the packages of corn and drain
Put the corn in a bowl.
Step 2. Separate the egg whites from the yolks into 2 bowls
Lightly beat the egg yolks.
Step 3. Add the yolks to the corn
Add flour, salt and pepper to taste
Step 4. Beat the egg whites until stiff with an electric whisk
Turn them into the dough.
Step 5.
Heat the pan
Add 2 tablespoons of oil.Step 6. Reduce the heat (medium)
Put the batter in the pan.
Step 7. Cook about 2 minutes per side
Step 8. Serve the pancakes on a plate
