This brew is tastier than supplements or black tea and does not require added sugar. The banana peel infusion contains 5-HT and 5-HTP (hydroxytryptophan); the latter is a natural amino acid, precursor and intermediate for the biosynthesis of serotonin and melatonin (brain neurotransmitters) from tryptophan.

You can make a green tea using:
- Fresh peels
- Dried peels in small piles in a microwave oven at the lowest temperature
- Frozen peels for a long time, even if they have freeze burns
- Dried and frozen peels or vacuum-packed frozen in some points of sale
Steps
Part 1 of 2: Prepare the Banana Peels
Step 1. Freeze the banana peels
- When you eat bananas, remove the label if present.
- Put the peels in the freezer.
Step 2. Thaw the banana peels
- When you have enough peels, fill a baking dish.
- Let them soften in the pan for an hour or two.
- They should turn black.
Step 3. Pasteurize the thawed and softened peels
- Put the peels in the oven at pasteurization temperature (about 65 ° C).
- Cook them until they dry out. It should take less than an hour.
Step 4. Reduce the peels into fragments and crumbs with your hand, just a little
Step 5. Pulverize one peel at a time in the blender; add up to four peels before emptying it
Step 6. Store the resulting powder in a cool, dark place
A glass jar (with or without seals) is a great choice
Part 2 of 2: Prepare the infusion
Step 1. Pour a heaping teaspoon of powdered banana peels into a cup and then some hot water
- This amount of powdered banana peels corresponds to one black tea bag.
- Always adjust the quantity according to your taste.
Step 2. Filter the infusion with a fine-grained coffee filter
- You can also insert a paper filter of the type used for American coffee.
- Alternatively, insert the banana peel powder inside an infuser, immerse it in water and leave it to infuse for a few minutes.
Step 3. Drink the infusion before going to bed, to help you sleep

Clean the bananas with warm soapy water when you first bring them home, then rinse them well with clean running water.
- Washing will avoid attracting fruit flies, and will reduce the likelihood that the infusion contains traces of pesticides left on the skins.
- Hopefully, however, the bananas used have not been treated with harmful chemicals, synthetic or natural.
