Eggplant is an elongated fruit. It belongs to the Solanaceae family, such as belladonna, tomatoes, potatoes and sweet peppers. Eggplants contain many minerals and vitamins, as well as antioxidant compounds that can lower cholesterol. Frying eggplant is one way to prepare this healthy and nutritious fruit. Method 1 of 3: Prepare the Eggplant for Cooking
Step 1. Select the eggplant that feels heavy and hard
When cooking eggplants, choose ones that have smooth, shiny skin.
Step 2. Store the aubergines in the refrigerator until you are ready to fry them
Eggplants are delicate and spoil quickly.
Step 3. Remove the peel of large or white eggplants
Peel them with a stainless steel knife. To prepare the eggplant for cooking, do not use a carbon steel knife, as the carbon reacts with the phytonutrients in the eggplant and causes it to turn black.
Step 4. Cut the eggplant into thin slices with a stainless steel knife
Step 5. Soften the eggplant
For frying eggplants, it is best to have soft and tender pieces. Sprinkle the aubergines with salt and leave them on for 20-30 minutes. This will draw some of the moisture out of the eggplant and prevent it from absorbing cooking oil.
Step 6. Rinse the eggplant
When preparing eggplants for cooking, it is best to remove some salt.
Method 2 of 3: Fry the Eggplant
Step 1. Mix 1 teaspoon (5 g) of turmeric powder, 1 teaspoon (5 g) of minced garlic and 1 teaspoon (5 g) of salt in a bowl
Step 2. Pour 1/4 cup (60ml) of frying oil into a skillet
Place the saucepan on the stove over medium-low heat. To fry the eggplant, you need to heat the oil first.
Step 3. Place the sliced eggplant in the dressing bowl, and move them to coat them with the spices
Step 4. Fry the eggplant slices for 2-4 minutes on each side
Cook them well, to bring out all the flavor.
Method 3 of 3: Fry the Breaded Eggplant
Step 1. Pour 16ml cooking oil into a pan
To cook eggplant, you can use sesame, olive, peanut, butter, or vegetable oil.
Step 2. Place the pan on a medium heat stove
Step 3. Break 1 egg and beat it in a bowl for 1 to 2 minutes
Step 4. Dip the eggplant slices into the egg
The egg will help the batter stick to the eggplant slices as you prepare them for cooking.
Step 5. Mix 1/2 cup (60 g) of flour, 1/4 teaspoon (1.23 g) of cornstarch, 1 teaspoon (5 g) of salt and 1/2 teaspoon (2.5 g) of pepper in another bowl
Step 6. Roll the egg-coated eggplant slices into the flour mix, covering them completely
Step 7. Place the battered eggplant slices in the pan
Frying them can cause the oil to boil, so be careful not to burn yourself.
Step 8. Cook the eggplant until golden brown
Turn them over several times so they don't burn.
Step 9. Remove the ready-made aubergines from the oil and let them drain on absorbent paper
