Cream of corn is a traditional dish from the Southern United States, but there are many different recipes you can follow to make it. Most of them use cream or milk to achieve the creamy consistency, but there are also variations that involve bacon. While not one of the healthiest dishes, creamed corn is a great side dish for fried chicken or even roasted pork cutlets.

- 1 kg of frozen corn
- 240 g of cream cheese
- 240 ml of skimmed milk
- 120 ml of cooking cream
- 60 g of butter
- 45 g of sugar
- Salt to taste.
Cream of corn with chives
Servings: 8
- 12 cobs of corn without leaves
- 480 ml of water
- 30 g of butter
- 240 ml of whipping cream
- 30 g of fresh chives
Steps
Method 1 of 4: Traditional Southern States Recipe
Step 1. Remove the kernels from the cob
Use a kitchen knife or a curved one specifically for corn. Also, crush the corn on the cob so that its "milk" falls back into the container with the kernels. You can use the knife for this.
Step 2. Mix the dry ingredients
In a small bowl, combine the sugar and flour together. You can also add salt and pepper at this stage. Finally, add the corn and mix.
Step 3. Pour in the liquid ingredients
Cover the corn mixture with the cream and water, stirring.
Step 4. In a saucepan, pour the bacon fat
Heat it over medium heat, add the corn mixture and reduce the heat to medium-low.
- It is quite difficult to find an ingredient to replace the bacon fat in this preparation, as it gives it a truly unique flavor. To get the fat, just cook one or two strips of bacon (or bacon) in a pan. The fat will become liquid and separate from the bacon as it cooks.
- However, you can try replacing it with more butter. In that case, it is also worth adding 15-30 g of Parmesan cheese and a sprinkle of liquid smoke. This way you get both the tangy and smoky flavor of bacon. You can use smoked paprika instead of liquid smoke.
Step 5. Cook the mixture for half an hour
Continue heating it until it thickens. Before serving the cream, add the butter.
Method 2 of 4: Simple Recipe with Bacon
Step 1. Remove the kernels from the cob
Use a kitchen knife or a special blade to shell the corn.
Step 2. Cut the bacon into cubes
Use a sharp knife and cut it finely. If you prefer, you can use kitchen scissors for this.
Step 3. In a large skillet, heat the bacon
Put the pan on medium heat first and then add the bacon.
Step 4. Cook the bacon
Wait until it is well browned.
Step 5. Add the corn, salt and pepper
Cook the mixture for 15 minutes or until the corn is tender.
Method 3 of 4: Recipe with the Slow Cooker
Step 1. Cut the cream cheese into cubes
Cut it quite coarsely and transfer it to the slow cooker.
Step 2. Add the rest of the ingredients to the appliance
It is not necessary to defrost corn in advance.
Step 3. Stir the mixture
The ingredients do not have to be perfectly blended at this stage, because they will homogenize during cooking.
Step 4. Turn the appliance on to the minimum
Let the mixture cook for 4 hours, stirring occasionally.
If at the end the cream is too thick, dilute it with more milk
Method 4 of 4: Cream of Corn with Chives
Step 1. Remove the kernels from the cob
Use a kitchen knife or a specific blade for corn on the cob. Do not throw the cob.
Step 2. Pour the corn into a saucepan
Also add the water and butter. Season with salt and pepper.
Step 3. Heat the mixture over medium heat
Cook it for 5-7 minutes, stirring occasionally.
Step 4. Squeeze the "milk" from the cobs inside the pan
You can use a knife to scrape the surface of the corn core. Try to get as much liquid as possible.
Step 5. Add the flour and cream
With the help of a whisk, add these ingredients to the corn milk. Bring the mixture to a boil for one minute.
Step 6. Blend 400g of corn and cream mixture
Pour everything into a blender and reduce it to a puree. Be very careful as the liquids are hot and create steam in the blender glass.
Step 7. Pour the puree back into the pan with the corn
Stir to even out the mixture and let it heat for another 5 minutes.
Step 8. Chop the chives and mix it into the mixture
Adjust salt and pepper to your taste.
Step 9. Finished
Advice
- To get the kids involved, ask them to remove the leaves from the cobs.
- When removing the kernels from the cob, always point the blade down and away from the body. If you remove the tip of the cob, you get a flat edge to rest it on.
