Palitaw are sweet and chewy rice cakes that are coated with sugar, coconut and sesame seeds. It is a dessert of Filipino cuisine; it is often sold near elementary schools, but is also very popular with adults. Method 1 of 1: Prepare the Palitaw
Step 1. Mix the rice flour and water in a large bowl
Mix the ingredients until you get a uniform mixture; a paste should form as you go. If the mass seems too sticky, sprinkle it with more rice flour and continue to knead it; if it is too dry, add a few drops of water and knead it. Adjust the amount of flour or water until you get a firm dough.
Step 2. Knead the mass to make it supple and smooth
It should be soft and dry to the touch, not sticky and wet. Divide the large ball into portions the size of ping-pong balls and then flatten them into small meatballs.
Step 3. Bring two liters of water to a boil in a large pot
Put the meatballs one at a time in the boiling water to cook them; when they float on the surface it means they are ready.
Step 4. Remove the cooked dough from the boiling water
As soon as the meatballs come to the surface, use a skimmer to transfer them to a plate; wait for them to cool down a bit before handling them.
Step 5. Mix the sugar with the coconut and sesame seeds in a large bowl
When the palitaw are cold enough to be touched with your bare hands, coat them one at a time with the coconut mixture. Make sure they are fully coated and press them lightly to allow the mixture to adhere. Arrange each candy on a plate after coating it with coconut, sugar and sesame seeds.
Step 6. Serve the palitaws while they are still hot
Arrange them on a tray and put a kitchen tong at the disposal of the diners to be able to take their palitaw more easily.

Try toasting the coconut and sesame seeds before using them to coat the rice flour cakes. Spread both ingredients on a non-stick baking sheet and bake at 160 ° C for 5-10 minutes
