Fruits that are dehydrated at home are particularly sweet, but keep shorter than store-bought varieties. A store-bought pineapple can be cut and prepared for dehydration in minutes. You can dry a pineapple in the oven or in a dehydrator, and then keep it for months in a cool, dry place.
Steps
Method 1 of 2: Dehydrate a Pineapple in the Oven
Step 1. Buy several pineapples at the supermarket
You can wait to buy them when the supermarket has excess goods: you could even pay for them around one euro per kg.
Step 2. Let the pineapple ripen completely
When the pineapple begins to have an intense and sweetish flavor, the sugars are concentrated and it is ready for dehydration. Drying it too early could result in slices with a sour taste.
Step 3. Cut the top and bottom of the pineapple
Place the pineapple horizontally on a cutting board. Cut about 2-3 cm from the upper end of the pineapple (the one with the pointed leaves) and from the lower end (the bottom of the pineapple itself).
Step 4. Remove the thick zest
Place the pineapple upright on the cutting board. Try to cut the pineapple from top to bottom with a single movement.
- Try to cut just below the zest.
- Rotate the pineapple and do the same thing until you have all the pulp in sight.
Step 5. Remove the "eyes"
Look at those small brown protrusions that form in diagonal lines from the top of the pineapple to the bottom. Take your knife and cut about 1-1.5 cm inside the pineapple, starting from the right with an angle towards the inside.
- Now go to the opposite side of the "eye" line, and cut starting from the left with an inward angle.
- Remove the "eye" line and throw it away.
- Then, find the next diagonal line and do the above again.
- When you have finished removing the "eyes", the pineapple will have a spiral design along its entire surface.
- This method of cutting pineapple requires a little practice, but will have the advantage of saving much more pulp than can be done by cutting "eyes" and zest with a single stroke.
Step 6. Cut your pineapple into slices or small pieces
If you want to dry your pineapple in slices, then cut it horizontally in relation to its length and to small thicknesses. Then remove the center with the knife.
- If you want to dry your pineapple into small pieces, cut it vertically to its length and then separate the pulp from the hard part in the center, and finally cut it into thin pieces.
- The thinner the slice, the easier it will be to dry it. It will dry faster and more evenly.
Step 7. Preheat the oven or set it to low temperatures
Best results are obtained by placing it at approximately 65 ° C (150 ° F). Never set a temperature higher than 90-95 ° C (200 ° F).

Step 8. Line one or two baking sheets with parchment paper
Place as many trays as possible in the oven.
Step 9. Place the baking sheets in the pre-heated oven
Leave in the oven for 24 hours. In some cases, it may take up to 36 hours.
Check if the pineapple is ready. If it still stays slightly mushy, that's okay
Method 2 of 2: Dehydrate a Pineapple in a Dehydrator
Step 1. Buy a dehydrator
You can find them for sale online on sites like Amazon. Or even in supermarkets, or in shops specializing in kitchen equipment.
Whether you plan to dehydrate fruit regularly, or you do it at irregular intervals, a dehydrator can make cheap snacks all year round
Step 2. Buy a pineapple
One pineapple may be enough to fill your dehydrator. If you have a larger dehydrator, consider buying several pineapples at once to increase your stock of fruit for storage.
You can also dehydrate already sliced pineapple by buying it canned. Canned pineapple almost always contains more sugar, salt and preservatives. So, if you want a natural snack, buy a whole pineapple and not the one already sliced
Step 3. Cut the pineapple
Remove the rind and the "eyes" using the procedure described above. Then cut it into slices or into small pieces.
Your slices should not be thicker than 0.5-0.7mm
Step 4. Turn on your dehydrator
And set it to an intermediate schedule. The temperature should be around 55-60 ° C (135 ° F).
Step 5. Place the pineapple pieces on the different trays of the dehydrator
Make sure there is some space between one piece and the other.
Step 6. Run the dehydrator for about 35 hours
Then take the dried pineapple and place it in a suitable place where it can be kept for several months.
