Potato croquettes are a truly delicious way to add this greedy tuber to any meal. This recipe is great for using older potatoes.
Ingrediants
- 3 large potatoes, boiled
- 1 teaspoon of fresh ginger, grated
- 1 teaspoon of fresh garlic, grated
- 6 fresh mint leaves, finely chopped
- 1 teaspoon of fresh coriander, finely chopped
- 1 tablespoon of corn starch
- Salt to taste
- 1/2 teaspoon of freshly ground black pepper
- Frying oil
- Corn starch for dusting
Steps
Step 1. In a large bowl, mash the boiled potatoes
Step 2. Add the remaining ingredients to the bowl
Blend and knead the dough until soft.
Step 3. After you have worked it, divide it into 8 or 10 portions
Shape each portion into a long croquette (similar to a small sausage).
Step 4. Arrange the kibble on a baking sheet, or tray, lined with non-stick paper
Put the pan in the refrigerator for about 15-20 minutes.
Step 5. When they have reached a firm consistency, remove the kibble from the refrigerator
Roll each kibble in cornstarch to coat it completely. Eliminate excess starch.
Step 6. Heat the oil in the pan
Gently place the croquettes in a pan and fry them using medium heat. When they have taken on a golden color on each side, your kibble will be ready to eat.
Step 7. Remove them from the pan with the help of a special scoop
Arrange them in a dish lined with absorbent paper and let them drain from the excess oil.
Step 8. Serve them still hot
These croquettes are perfect to be dressed with ketchup, mayonnaise or other sauces and toppings of your choice.
