Maple syrup candies have a sweet taste and a rich, creamy texture. Preparing them is quite easy, but you have to pay attention to the high temperatures necessary to cook them. Read on to find out how to make them.
Ingrediants
- 250ml (or larger) of pure maple syrup
- 0.5 ml of oil or butter
- Non-stick cooking spray
- Walnuts (optional)
Steps
Part 1 of 2: Cook the Maple Syrup
Step 1. Grease the candy molds
Grease the candy molds using non-stick cooking spray. You don't need much of it: a light sprinkle is enough to prevent the candy from sticking to the surface once it has hardened.
Step 2. Pour the maple syrup and oil into a saucepan
250 ml of syrup allows you to obtain about 250 g of candies. Do you want to do more? Just increase the syrup doses. The function of the oil is to prevent excessive foam from forming in the syrup during boiling.
Step 3. Bring the syrup to a boil
Cook it over medium heat until it boils. At this point, measure the temperature with a cake thermometer. Remove it from the heat once it reaches 110 ° C.
Step 4. Let it cool for 10 minutes
Set a timer to not exceed the time. If you wait too long, the syrup may harden and at that point it will need to be diluted with water and boiled again. As it cools, it will begin to become cloudy.
Part 2 of 2: Transfer the Maple Syrup to the Candy Molds
Step 1. Stir for 5 minutes
Once the syrup has cooled, mix it for about 5 minutes with a wooden spoon. It will begin to thicken and become cloudy. If you want, you can also add a handful of walnuts at this stage.
Step 2. Once the syrup has thickened, pour it into the molds you have greased
Pour it into them with the help of a spoon. Collect the remaining syrup from the sides of the pot by scratching it with a plastic or silicone spatula.
Step 3. Let the candies thicken
Let the treats cool and fix for at least an hour. Wait for them to take on a hard consistency before trying to remove them from the molds. After removing them, store them in an airtight container, where they will keep fresh for up to a month.
Advice
Choose the molds according to the time of year. You could use a mold with dead leaves in the fall, one with snowflakes in the winter, and one with bunnies in the spring
Warnings
- Be especially careful when boiling maple syrup. High temperatures can cause severe burns if it comes into contact with the skin.
- Do not leave the boiling syrup unattended if you have children or pets.
