Catfish is a tasty fish that is highly prized by the inhabitants of the southern United States. While it usually tastes fried, catfish is also delicious when grilled, baked or pan-fried. It is a fish with a delicate, sweet flavor and its flesh flakes less than other white fish, leaving many possibilities for cooking. If marinated in brine, catfish fillet can even be eaten raw. Pan-fried catfish
- 4 catfish fillets (220 g)
- 1/2 cup of yellow cornmeal (80 g)
- 1/4 cup 00 flour (30 g)
- 1 teaspoon of salt
- 1 teaspoon of Creole spice mix
- 1/2 teaspoon of paprika
- 1/4 teaspoon ground black pepper
- 3/4 cup of milk (180 ml)
- 6 tablespoons of butter
- Lemon wedges as a garnish
Fried Catfish
- 4 catfish fillets (170 g)
- 1 cup of flour 00 (120 g)
- 1 cup of cornmeal (160 g)
- 1 tablespoon of baking soda
- 1 tablespoon of coarse salt
- 1/2 teaspoon of cayenne pepper
- 1 (33 cl) bottle of amber beer
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 2 tablespoons of granulated garlic
- 1 lemon squeezed
Baked Catfish
- 2 catfish fillets (200-220 g)
- 110 g of butter
- 120 ml of dry white wine
- 1 tablespoon of lemon juice
- 1 teaspoon of minced garlic
- 1 teaspoon of chopped cilantro
- Salt as needed
- Pepper as needed
- 1 tablespoon of paprika
Grilled catfish
- 6 catfish fillets (180-220 g)
- Vegetable oil spray
- 1/3 cup of lemon juice (80 ml)
- 3 tablespoons of melted butter
- 1 tablespoon of lemon, pepper and salt spice mix
Steps
Method 1 of 4: Pan-fried Catfish
Step 1. Prepare the catfish
Before cooking them in a pan, rinse 4 catfish fillets in cold water and dry them with absorbent paper.
Step 2. Prepare the corn flour dough
In a deep dish, mix cornmeal, salt, 00 flour, a mixture of Creole spices, paprika and pepper. Combine ½ cup of yellow cornmeal (80 g), ¼ cup of flour (30 g), 1 teaspoon of salt, 1 teaspoon of Creole spices, ½ teaspoon of paprika, ¼ teaspoon of ground black pepper.
Step 3. Pour 3/4 cup of milk (180ml) into a deep dish
Step 4. Put the catfish fillets in the milk and pass them in the spiced cornmeal
The milk will help them absorb the cornmeal. Once done, shake them to remove the excess dough.
Step 5. Heat 3 tablespoons of butter in a large saucepan
Put the pot on a high heat.
Step 6. Cook both sides of the fillets for 3 minutes, or until the fish begins to flake when tapped with a fork
Then, turn it over and do the same with the second side, which may take less cooking time.
Step 7. Place the fillets on a tray
Cook 2 more fillets.
Step 8. Serve on the table
Garnish the fish with lemon wedges and serve immediately.
Method 2 of 4: Fried Catfish
Step 1. Preheat the deep fryer to 180 ºC
Step 2. In a large bowl, combine the flour, baking soda, cornmeal, salt, and cayenne pepper
Incorporate 1 cup of 00 flour (120g), 1 cup of cornmeal (160g), 1 tablespoon of baking soda, 1 tablespoon of salt, and ½ teaspoon of cayenne pepper.
Step 3. Combine 1 bottle of amber beer (333ml) with the rest of the ingredients
Keep mixing the ingredients to remove the lumps until the beer is perfectly incorporated into the rest of the ingredients.
Step 4. Cut 4 catfish fillets in half along the spine
Make two strips for each fish.
Step 5. Prepare the dough with salt
To make this mixture, pour 1 tablespoon of salt, 1 tablespoon of pepper and 2 tablespoons of granulated garlic into a bowl and mix them.
Step 6. Sprinkle the dough with salt on the fillets
Season both sides of the fillets with the mixture made with salt, pepper and garlic.
Step 7. Dip the fish strips in the beer batter
Leave them in the batter for 10-15 seconds for them to absorb it.
Step 8. Put the fish in the deep fryer
Put the fillets in the fryer as soon as the oil is at temperature. Cook a few at a time and make sure they don't stick.
Step 9. Fry the fish for 3-4 minutes
Continue frying the fillets until they are golden and crispy.
Step 10. Serve on the table
Remove the fillets from the fryer and place them on a plate. Sprinkle the fish with lemon juice and enjoy while still warm.
Method 3 of 4: Baked Catfish
Step 1. Preheat the oven to 190ºC
Step 2. Season the fish with salt and pepper to taste
Step 3. Place the fish in an oval pan
Step 4. Melt the butter in a pan heated over high heat
Melt 110 g of butter in a small saucepan.
Step 5. Add wine, lemon juice, garlic and cilantro
In a small bowl, pour 120ml of dry white wine and add 1 tablespoon of lemon juice, 1 teaspoon of minced garlic, and 1 teaspoon of chopped cilantro.
Step 6. Once mixed, pour the wine and the rest of the ingredients into the pan and cook for 2 minutes
Step 7. Remove the mixture from the heat and pour it over the fish
Next, add 1 tablespoon of paprika.
Step 8. Bake for 10-12 minutes
Place the fish in the oven until cooked.
Step 9. Serve on the table

Method 4 of 4: Grilled Catfish
Step 1. Grease a fish grill with cooking spray
Step 2. Put the fillets on the grill
Take 6 catfish fillets and place them on the fish grill.
Step 3. Mix lemon juice, butter, and a mix of salt, lemon and pepper spices
In a small bowl, mix 1/3 cup of lemon juice (80 ml), 3 tablespoons of melted butter, and 1 tablespoon of salt, lemon and pepper mix.
Step 4. Brush the fillets with the mixture of butter and spices
Use a kitchen brush and cover the fillets with the dough.
Step 5. Start cooking the fillets
Close the fish grill and cook the catfish.
Step 6. Grill the fish over charcoal at 150-200 ° C for about 6-8 minutes per side
Both sides should fall apart easily as soon as you touch them with a fork. While cooking, moisten the fish with lemon juice.

Advice
