Lamb chops are a cut of the animal's rib cage and contain the ribs. They are tender, thin and succulent and are usually cooked medium rare over high heat. You can enhance the aroma with spices or with a long marinade. A marinade contains an acidic and an oily ingredient which help to soften the meat a lot.
Steps
Part 1 of 3: Prepare the Marinade
Step 1. Thaw the ribs by placing them in the refrigerator for 12-24 hours before cooking
You shouldn't defrost them in the microwave. If you are short on time, you can lightly marinate them for an hour.
Step 2. Place the meat in a large sealable plastic bag
Step 3. Blend the marinade in a bowl
There are many recipes that allow you to get different flavors. Here are some tips to try:
- Try a Middle Eastern flavor marinade by mixing 120ml of yogurt with 30ml of olive oil, 10g of chopped fresh mint, a clove of minced garlic and 3g of ginger. Add 0.5-1 g of cayenne pepper, cumin, and cilantro.
- Combine 15ml of hoisin sauce with 15ml of soy sauce, 15ml of rice wine and 5ml of honey. Incorporate a pinch of five-spice powder.
- Try a French marinade using a combination of 5ml Dijon mustard, 30-45ml olive oil and 30ml dry vermouth. Add chopped rosemary, crushed garlic, and black pepper.
- You can also make a Vietnamese-inspired blend with crushed garlic, 30ml lime juice, and just as much soy sauce.
- For a classic marinade, combine red wine with olive oil and crushed garlic.
Step 4. Mix the ingredients with a whisk
The liquid must be sufficient to cover at least half of the ribs. Try to use the acidic and oily ingredients in equal parts.
Part 2 of 3: Marinating the Lamb Chops
Step 1. Pour the marinade into the plastic bag
Massage the meat to make sure it comes into full contact with the liquid.
Step 2. Let the excess air out and seal the bag
Step 3. Place everything in the refrigerator for between 4 and 24 hours before proceeding with cooking
The longer the meat remains in the marinade, the more intense the flavor will be.
Step 4. Every two hours turn the bag so that the liquid covers all the meat evenly
You can also just turn it once halfway through the marinating time.
Part 3 of 3: Cook the Lamb Chops
Step 1. Remove the meat from the refrigerator at least 30-45 minutes before cooking
In this way it reaches room temperature and cooking will be uniform.
Step 2. Remove the chops one at a time and pat them dry with kitchen paper
Step 3. Heat the grill or pan over high heat
Grease the pan with oil when it is hot (if using the pan).
Step 4. Arrange the meat on the grill or pan
The various cutlets must not touch each other, turn them over after 3-4 minutes.
Step 5. Cook the other side for the same amount of time
Step 6. Remove the chops from the heat
Let them sit for 5-10 minutes.
Step 7. Serve immediately
Advice
- Consider storing the marinade and adding it to the vegetables while stir-frying them. Cook the vegetables while you wait for the ribs to reach room temperature.
- The best way to make sure your marinade tastes great is to taste it after you've made it. If it's good, then the meat will be good too.
