The sweetness of pineapple and carrots will be perceptible with every bite. The flavor of these donuts really recalls that of the carrot cake.
The indicated doses allow you to prepare 18 large donuts
Ingrediants
For the Donuts:
- 110 g of butter, left to soften at room temperature
- 1 egg
- ½ teaspoon of salt
- ½ teaspoon of vanilla extract
- 130 g of brown sugar
- 160 ml of vanilla yogurt
- 140 g canned pineapple, drained from the juice and cut into small pieces (keep the juice)
- 80 g of grated carrots
- 2 teaspoons of cinnamon
- ½ teaspoon of nutmeg
- 1 ½ teaspoons of baking powder
- 1 ½ teaspoons of baking soda
- 200 g of flour
For the Icing:
- 120 g of cream cheese
- 4 tablespoons of butter
- 2 tablespoons pineapple juice (the one preserved from canned pineapple)
- 90 g of powdered sugar
- 60 g of chopped walnuts
Steps
Step 1. Preheat the oven to bring it to a temperature of 190 ° C
Part 1 of 3: Prepare the dough
Step 1. Blend the butter and sugar
Pour them into a large bowl or food processor and whisk them to obtain a creamy mixture.
Step 2. Mix in the yogurt, egg and vanilla extract
Continue to mix the mixture with the whisk to mix the ingredients.
Step 3. Add the chopped pineapple and grated carrots
Distribute them evenly throughout the dough.
Step 4. Now blend the remaining dry ingredients
Pour the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a medium-sized bowl. Stir with a metal hand whisk.
Step 5. Combine the two blends
Pass the dry ingredients through a sieve and gradually incorporate them into the wet ones.
To get the best possible result and to be able to mix the ingredients without difficulty, sift only a little flour at a time without ever stopping mixing
Part 2 of 3: Bake the Donuts in the Oven
Step 1. Pour the batter into the donut mold
Fill the rings about half of their capacity.
Step 2. Bake them in the oven for 10 minutes
Step 3. Once ready, let the donuts cool for a few minutes in the mold
Step 4. Transfer them to a cake rack where they can cool completely
Let them rest undisturbed for 15-20 minutes.
Part 3 of 3: Prepare and Apply the Icing
Step 1. Blend the ingredients you need to make the glaze (except the walnuts)
Pour them into a small bowl and mix them with the metal whisk for the time necessary to obtain a smooth and uniform cream.
Step 2. Dip the top side of the donuts into the icing
Step 3. Decorate the donuts with the chopped walnuts
You need to sprinkle them on the frosting before it dries.
