Method 1 of 2: Make a longitudinal cut
Step 1. Place the pork tenderloin on a flatbed

Use a sharp knife to make a vertical cut along the portion of the pork loin.
Step 2. Finish the cut about 2.5 cm before the end of the fillet
Step 3. Now open the meat and spread it out
Step 4. Mash the meat until it is uniformly thick, approximately 0.8mm thick
Step 5. Refrigerate the meat while you prepare the filling
Step 6. Put your favorite filling on the pork tenderloin and then roll it up
Step 7. Close the fillet with butcher string
Step 8. Cook as your recipe suggests
Method 2 of 2: Create a Stuffing Pocket
Step 1. Put the fillet on a flatbed
Step 2. Make a longitudinal cut, from about 1 cm from the bottom to about 1 cm from the top, to create a pocket
Step 3. Open the pocket you just created
Step 4. Make a knife cut along the fillet portion, again 1cm from the bottom to 1cm from the top
Step 5. Roll out the fillet to have a flat piece of meat
Step 6. Repeat the process until the pork is about 1cm thick
Step 7. Mash the meat, if needed, to make it more even
Step 8. Refrigerate the meat while you prepare the filling
Step 9. Place your favorite filling on the pork tenderloin and then roll it up. Close the tenderloin with some butcher string
Step 10. Cook as your recipe suggests
Recipe
Fillet with Sage
- 2 pieces of pork tenderloin
- 5 sage leaves
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of olive oil
Steps
- Prepare the fillet using one of the methods described above.
- Put some salt and pepper.
- Fold or roll it to form a cylinder (the original shape of the fillet).
- Place the fillet on the grill with the sage leaves.
- Put some olive oil.
- Cook until the internal temperature is around 70 °.
