Do you have a crazy craving for pork ribs, cooked like in a restaurant, with the meat coming off the bones and melting in your mouth? First choose how you want to flavor them (with a sauce or spices) and then bake them in the oven at a low temperature but for a long time. Finally, turn on the grill or pass them back on the grill to give them that delicious crust. Read on to learn the right process.
Steps
Part 1 of 3: Preparation
Step 1. Remove the membrane from the meat
Ribs are sold with a whitish membrane that sits on the inside of the rib cage. If you don't get rid of it, it becomes hard to chew. This is not a complicated operation: stick your fingers under it and tear it off. If you need help, use a knife to loosen it from the meat.
Step 2. Decide how to flavor the ribs
You can start with a simple seasoning of salt and pepper and then add the sauce at a later time; or make a dry spice mix that you can rub into the meat before cooking and let it soak in overnight. In both cases you will have delicious and excellent ribs, it just depends on your taste.
- If you prefer to use spices, you need to organize yourself a little in advance because you will have to let the meat rest overnight so that it absorbs the aromas. Wrap the ribs in aluminum foil and place them in the refrigerator.

Here are some spices you can use to flavor meat and make a spicy and delicious dish. Just mix them together and rub them on the yoke:
- 2 tablespoons of salt.
- 1 tablespoon of chili powder.
- 1 teaspoon of black pepper.
- 1/2 teaspoon of cayenne pepper.
- 1/2 teaspoon of smoked paprika.
- 1/2 teaspoon of dried thyme.
- 1/2 teaspoon of garlic powder.
Part 2 of 3: Baking
Step 1. Preheat the oven to 120 ° C
Step 2. Prepare the dish
When the time comes to cook the ribs, the dish must be ready. Choose a large one with edges at least 5 cm high so that the ribs can be spread comfortably in a single layer. If you overlay the meat, it will not cook evenly. Line the pan with aluminum foil so that the ends protrude from the edges of the short sides.
- It is crucial that the dish is deep. The ribs release a lot of juices and it would not be pleasant at all if they overflowed from the pan.
- You can use a glass or metal dish.
Step 3. Pour 6mm of water into the pan
This allows the meat to remain soft as it cooks while preventing the side in contact with the pan from burning. Pour it directly over the aluminum foil.
Step 4. Place the ribs in the pan
The arch of the yoke should be facing upwards with the "bony" part resting on the aluminum sheet. Make sure the ribs don't overlap.
Step 5. Cover the dish with another loose aluminum foil to form a “curtain”
First fold the ends of one sheet and then lay a second to give this curtain shape. Roll the aluminum around the handles of the pan to hold it in place and check that there are no holes.
Step 6. Place the pan in the oven and cook for two and a half hours
Never remove the aluminum during the first hour. The ribs will be ready for the finishing touch when the meat begins to peel off the bones without difficulty if you prick it with a fork.
Part 3 of 3: Final Touch
Step 1. Prepare the barbecue sauce if you have decided to use it
You can rely on a commercial product or make it yourself. You will need to add it to the ribs during the final stage of cooking, but you can start preparing it while the meat is still in the oven. If you've opted for a homemade sauce, here's how:
- In a saucepan, sauté 40 g of diced onion with a little olive oil.
- Add 120ml ketchup, 15ml olive oil, 15ml apple cider vinegar, 15ml hot sauce, 2 tablespoons brown sugar, salt and pepper.
- Simmer the mixture for 15-30 minutes, stirring occasionally.
Step 2. Remove the dish from the oven and remove the foil
To give the ribs the classic external crust, you must finish cooking without aluminum foil.
Step 3. Turn on the grill or heat a grill
The method of finishing the cooking is up to you. In both cases, you will get ribs that are crunchy on the outside but with a tender heart that falls apart with each bite.
Step 4. Spread the rack with the barbecue sauce
You can pour it directly over the meat, inside the pan.
Step 5. Broil or grill the ribs for about 5 minutes
If you have decided to grill, place the pan on the top shelf of the oven without an aluminum cover. If, on the other hand, you have decided on the grill, place the rack on top and cook until crispy.
Step 6. Bring the ribs to the table
Offer them to each diner with another barbecue sauce, if they wish.
Advice
- Heat them on the grill for 5 minutes once they are ready.
- Open the oven 15 minutes before the end of cooking and add the sauce. In this way the sauce will penetrate a little into the meat.
